I know this creamy mushrooms recipe is going to divide people as you are generally either a mushroom lover or a mushroom hater. There’s no in between!
I absolutely love mushrooms but no one else in my family does, so I thought why not make a single serve recipe involving mushrooms for breakfast just for me!
The mushrooms are fried in a little butter and some thyme for bags of flavour. Once cooked you mix in some creme fraiche and dijon mustard to make them super creamy and delicious.
The simply toast a slice or sourdough or tiger bread and pop the mushrooms on top. An amazingly tasty and filling breakfast in under 10 minutes!

Ingredients
- 150g mushrooms
- 1 tsp butter
- ¼ tsp thyme
- 1 tbsp creme fraiche
- ¼ tsp dijon mustard
- salt and pepper
- 1 slice tiger or sourdough bread
Instructions
- Chop the mushrooms into three of four slices.
- Melt the butter in a frying pan and add the mushrooms and thyme.
- Cook cook approximately 5 minutes until the mushrooms are soft and any water released has cooked away.
- Add the creme fraiche and dijon mustard and stir well. Season to taste with salt and pepper.
- Toast a slice of tiger or sourdough bread and add the mushrooms on top.
- Serve immediately.
