You may have read my last couple of posts (Tortilla Salad Bowl or Eton Mess) in which I talked about becoming an ambassador for FareShare, a UK charity fighting hunger and food waste by redistributing surplus food from the food industry to local charities and communities projects.
FareShare supports over 10,000 frontline charities and community groups including homeless shelters, children’s breakfast clubs, lunch clubs for older people and domestic violence refuges. At this time of year they also support holiday hunger clubs through their #ActivateAte campaign, supplying food to over 400 holiday projects, providing nutritious meals and snacks to 50,000 children.
As part of my work with FareShare I’m going to be creating some recipes using some of their most commonly redistributed food items. Today’s recipe is using fresh salmon to make a delicious kid-friendly creamy pasta dish.
STEP 1
The first step is to boil up some pasta in a saucepan. I’ve used bowtie pasta but any type of dried pasta shape is fine.
STEP 2
Next it’s time to create the delicious salmon and sauce. In a frying pan cook some onion and garlic in oil or butter and then add salmon chunks, frozen peas and stock cube.
Then add 100ml of the water that the pasta is cooking in to the pan. This will help create a sauce that will blend perfectly with the pasta and not be watery.
STEP 3
Once the salmon has cooked add the cream and then finally add the cooked and drained pasta.
Serve straight away for a delicious and filling meal that the whole family will love. If you have very fussy eaters who don’t like fish, then try cutting it into smaller pieces before serving. When mixed with the cream sauce and pasta they will barely notice that it’s even there!

Ingredients
- 300g / 10.5oz pasta
- ½ tbsp oil or butter
- 1 onion, finely diced
- 1 garlic clove, chopped
- 2 salmon fillets, skin removed
- 100g / 1 cup frozen peas
- 1 vegetable stock cube
- 100ml / 0.5 cup single cream
Instructions
- Cook the pasta in a saucepan on the hob according to the package instructions.
- Heat the oil or butter in a frying pan and add the onion and garlic. Cook for 2-3 minutes until softened but not browned.
- Cut the salmon into small pieces (I find it easier to do this with scissors) and then add to the pan along with the frozen peas and the stock cube.
- Remove 100ml of the water from the pasta and add that to the pan. Stir until the stock cube has dissolved.
- Cook this on low for about 5 minutes, turning the salmon pieces once.
- Remove from the heat and then stir in the cream.
- When the pasta has cooked, drain well and then add to the pan with the salmon. Mix well and then serve immediately.

Hello – can you use tinned salmon for this?

Hi, yes you certainly can use tinned salmon, but it doesn’t need to be cooked so just add it in towards the end. Enjoy.
