And whilst boxing day buffets of cold meats, cheeses and bubble and squeak is all very well, it can get a bit boring!

Let’s start with a boxing day dinner that is going to be an absolute crowd pleaser! Not only is this easy curry recipe great for using up any leftover turkey that you might have after Christmas Day, it’s a 30 Minute Meal, so on the table super fast.
And we’ve kept the spice levels low so that it’s suitable for the whole family!
Boxing Day Dinner – Leftover Turkey, Cranberry & Brie Pie
If you haven’t made a Christmas Pie before, then you need to try my turkey, cranberry and brie version! I think this has to be one of my favourite Boxing Day Meals.
Ready made puff pastry takes all the faff out of this pie recipe and uses up leftover veggies as well as turkey. On the table in 25 minutes too! What’s not to love?

You might not think of bangers and mash as a traditional boxing day meal, but if you’ve got leftover mashed potato, then this recipe is going to help you use up that mash. And make a pretty awesome family dinner with not a lot of effort.

If pies or curry aren’t your thing, then try this leftover turkey pasta instead! If like me, you normally have both turkey and ham over Christmas, then this recipe is great for using up those leftovers on boxing day.

For the last couple of years, one of my favourite Christmas Recipes is this Christmas Ham in Coke. In the unlikely event that you have any leftovers, then you can use them in this one pot pasta recipe.
Simply swap out the bacon lardons for the same amount of leftover ham and you have a really flavourful but super easy spaghetti carbonara.

If you made the Ham In Coke at Christmas, chances are that you won’t have any leftover ham, so you can always use packet ham for this recipe.
