One Pot Spaghetti Carbonara

A delicious and super easy recipe for Spaghetti Carbonara, all cooked together in one pot. This tasty family meal takes just 2 minutes to prepare and 15 minutes to cook, perfect for busy evenings when you don’t have a lot of time to spend in the kitchen!

If there’s one dish I know for sure my kids will eat it’s spaghetti! We have a few tried and tested recipes that I make a lot but recently I’ve been trying to come up with slightly more adventurous flavours for my family to try.

How Do You Cook One Pot Spaghetti?

This One Pot Spaghetti Carbonara ticks all the boxes. It’s so quick and easy to make, takes just 15 minutes and it can all be cooked in just one pan – meaning less washing up afterwards!

The pasta is cooked in vegetable stock which gives tonnes of flavour to the dish. Most of the stock gets absorbed into the pasta. When cooked, eggs and cream are added for that traditional creamy sauce.

Can you make a healthy Carbonara?

People often think of carbonara as being quite unhealthy but I’ve only used 125ml of single cream which when divided between four people works out as very little.

Served with lots of freshly cooked greens like broccoli, spinach or kale, I think this actually makes a really balanced family meal.

Description

A delicious and super easy recipe for Spaghetti Carbonara, all cooked together in one pot. This tasty family meal takes just 2 minutes to prepare and 15 minutes to, perfect for busy evenings when you don’t have a lot of time to spend in the kitchen!


Ingredients

  • 1 tsp oil
  • 200g / ¾ cup bacon lardons
  • 900ml / 4 cups vegetable stock
  • 350g / 12oz spaghetti
  • 2 cloves of garlic, crushed
  • 125ml / ½ cup single cream
  • 2 medium eggs
  • 50g grated parmesan
  • To serve – chopped fresh parsley and a little more grated parmesan

Instructions

  1. Add the oil to a large pot or a wok and heat. Add in the bacon lardons and cook for 3-4 minutes until soft. Remove them from the pan and put to one side in a bowl.
  2. In the same pan add the vegetable stock and bring it to the boil. Add in the spaghetti and the crushed garlic cloves and cook for 8-10 minutes until the spaghetti is soft and all the stock has just about absorbed.
  3. Add the cream to a small jug and crack in the two eggs. Pour this into the spaghetti and mix well.
  4. Add the grated parmesan and mix again before adding the cooked bacon back in.
  5. Serve immediately with a little chopped fresh parsley and some more granted parmesan.

    I don’t have any liquid veggie stock, would it be ok to substitute chicken stock or use veggie stock bullion cubes and water?

    This was great! 🙂 At the end I added some peas and a cup of barely cooked chopped beet greens (cut up tiny so my girls wouldn’t mind them.) I had some porkchops so I used that instead of bacon, and used fresh/refrigerated fettuccini instead of dried spaghetti. Had to adjust the liquid and the cooking times a little but it turned out great. 🙂

    Do you wait till the egg mixture is cooked through with the pasta?

    This was super easy and my 5 yr old, who’s very picky ate seconds! Converting the measurements was simple with the assistance of Google, lol. I used a little too much spaghetti so I had to add some whole milk to thin it out. I would suggest only using 3/4 of the 1 pound package of noodles. I also wasn’t sure what temperature you were using at the end. I wouldn’t set it too high, maybe medium heat since you’re basically just heating it through. Otherwise, it was great! Thank you for sharing!
