Leftover Turkey & Ham Pasta

Turn leftover Christmas turkey and ham into a delicious and easy one pot creamy pasta dish!

Christmas leftovers are fantastic but if you don't feel like eating cold cuts for several days running then try this easy One Pot Creamy Pasta instead. With just a few extra ingredients you can turn leftover turkey and ham into a delicious and filling dinner.

I'm a massive fan of One Pot Recipes. They're so simple to make and save on washing up too which is always a bonus, especially at this time of year when the pots and pans seem endless!

For this recipe you'll need a large frying pan with deep sides or a casserole dish like I'm using.

The first step is to fry some onion and garlic in a little oil.

Add milk, chicken stock and pasta. I'm using parpadelle pasta but any kind of pasta shape will be fine.

Bring to the boil then simmer for 6 minutes.

Add the leftover turkey and ham along with some frozen peas and simmer for another 6-8 minutes until the pasta has cooked and most of the liquid has been absorbed.

Finally, add some creme fraiche and grated parmesan and it's ready to serve.

INGREDIENT SUBSTITUTIONS

Pasta - I used parpadelle but any shapes will work.

Stock - I used chicken stock but feel free to use veggie stock instead.

Creme Fraiche - If you can't get creme fraiche then use cream cheese instead or else some cream.

Parmesan - This can be substituted for grated cheddar cheese if you prefer.

Description

Turn leftover Christmas turkey and ham into a delicious and easy one pot creamy pasta dish!


Ingredients

Scale
  • 0.5 tbsp oil
  • 1 onion, diced
  • 2 cloves garlic, diced
  • 700ml milk
  • 600ml chicken stock
  • 350g pasta
  • 200g cooked turkey
  • 200g cooked ham
  • 100g frozen peas
  • 3 tbsp creme fraiche
  • 50g grated parmesan


Instructions

  1. Heat the oil in a large deep frying pan or casserole dish.
  2. Add the onion and garlic and cook for a couple of minutes.
  3. Add the milk, chicken stock and pasta. 
  4. Bring to the boil and simmer for 6 minutes, stirring regularly.
  5. Add the cooked turkey, cooked ham and frozen peas and simmer for another 6-8 minutes until the pasta is cooked and most of the liquid has been absorbed.
  6. Turn off the heat and stir in the creme fraiche and parmesan.
  7. Serve immediately.

Notes

This recipe is best eaten immediately.

    Perfect way to use leftovers, but at the same time not more Christmas food which we have had enough of by this point, a creamy bowl of pasta goes down a treat.
