A really quick single serve Tomato Soup recipe, cooked in the airfryer and ready in less than 15 minutes
You can’t beat a bowl of homemade soup for a quick and easy lunch for yourself at home.
But when you’re short on time, making up a big batch of soup probably feasible… until now!
Rather than roasting tomatoes for half an hour in the oven and then cooking them on the hob, you can use your airfryer and blender to make it in less than 15 minutes.
How To Make Tomato Soup In The Airfryer
Simply add cherry tomatoes, garlic and dried basil to an oven-proof dish (make sure it fits first!)
You can also add these directly into the airfryer but I prefer to use a dish as it makes cleaning up a bit easier.
Season with salt and pepper and spray with a little oil.
Airfryer at 190c for 12 minutes.
The tomatoes will be soft and sweet, as if you have oven roasted them.
Transfer all this to a blender or smoothie maker.
Add 100ml of hot water and a third of a vegetable stock cube, then blend until completely smooth.
It’s now ready to serve up. So quick and easy!
