A delicious and easy lunch for one; a Ham & Cheese Galette made with a tortilla wrap rather than the traditional crepe.

If you’re bored of the same old lunch at home then try this Cheat’s Galette idea. Just four simple ingredients and ready in a few minutes.
Galettes are traditionally made with thin French pancakes aka crepes. They are a little more involved time wise as you need to make up the batter and fry the crepe before then adding the toppings.

To make life a little easier I’m using a tortilla wrap instead. Apologies to any French people appalled by this idea but it does make a handy little cheat!
I used Emmental cheese in my recipe but if you don’t have it or can’t find it then grated cheddar will work too.

If you are being mindful of calories then this recipe has 460 calories in it. Not bad for a really filling and tasty lunch. You could add a side salad to it to get some veggies in too.

Description
A delicious and easy lunch for one; a Ham & Cheese Galette made with a tortilla wrap rather than the traditional crepe.
Ingredients
- 1 large tortilla wrap
- 40g grated Emmental cheese
- 3 slices ham
- 1 egg
Instructions
- Add the wrap to a large frying pan.
- Add the grated Emmental on top and then the ham, creating a circle shape with the slices of ham, leaving a space in the middle for the egg.
- Cook for 1 minute on a medium heat until the cheese is just starting to melt.
- Crack the egg into the middle and then fold the side of the wrap in to create the square galette shape. Cook for another 2 minutes.
- Place the frying pan under the grill for a final 2-3 minutes to ensure the yolk of the egg is cooked.
- Serve immediately. This is optional but you can season the top with some salt and pepper and add chopped parsley if you like.
