A simple Tomato Pasta Soup recipe, easy to make and great for a quick and easy lunch for kids.

I’m always trying to introduce my kids to new tastes and flavours and expand their diet just a little more. But sometimes they just want a very simple meal and I don’t want the stress of trying to get them to eat something new.
Days like this I turn to my Tomato Pasta Soup. Easy to whip up with just a handful of store cupboard ingredients and cheap to make too.
The first step to this recipe is to fry onions and garlic in oil on the hob.

Add tinned tomatoes, vegetable stock and dried basil and bring to the boil.

These are the tinned tomatoes I like to use. They are very finely chopped, meaning you don’t get the lumps of tomatoes that you get with other brands. They taste really good too.

Next I add some small pasta shapes like these Pasta Stars.

Leave to simmer for 10-12 minutes, stirring a few times to ensure the pasta doesn’t stick.

And that’s it. Very simple but really tasty.
To serve I add some grated parmesan and fresh basil to the top but this is totally optional. Grated cheddar tastes really good too.

Description

Ingredients
- ½ tbsp oil
- 1 onion, diced
- 2 garlic cloves, crushed
- 2 tinned chopped tomatoes
- 600ml vegetables stock
- ¼ tsp dried basil
- 100g small pasta shapes
To top:
- grated parmesan and fresh basil
Instructions
- Add the oil and onions to a large saucepan on the hob and cook for 3 minutes.
- Add the garlic and cook for another 1 minute.
- Add the tinned tomatoes, vegetable stock and dried basil. Bring to the boil.
- Add the pasta shapes and simmer on high for 10-12 minutes until the pasta has cooked. Stir every few minutes to ensure that the pasta does not stick.
- Serve immediately with grated parmesan and fresh basil leaves.
Notes
Leftovers can be kept in the fridge for up to 3 days and be reheated on the hob or in the microwave. The pasta will expand even more so feel free to add some extra stock or water to the soup to thin it out a little.
It can also be frozen for up to 3 months. Defrost in the fridge overnight and reheat as above.
