I hope back-to-school week is going smoothly for everyone. Aoife went back to school today and Finn started school, so lots of emotions going on here but overall I’m happy to get back to a structured routine!
To try to ease us all into the new school year I’m sharing lots of quick and easy lunch box ideas that kids will actually want to eat! Yesterday I shared my Sausage & Tomato Skewers Lunch Box recipe and today it’s all about this Vegetable Rice Salad.
Vegetable Rice Salad
For this lunchbox you will need:
- Microwave Vegetable Rice Pouch
- Carrot
- Cucumber
- Red Pepper
- Mini Peppers
- Cream Cheese
- Strawberries
- Blueberries
The basis of this lunch box is a vegetable rice salad, made quickly and simply with a packet of instant rice. Whilst the rice is cooking for 2 minutes in the microwave you can chop the extra veggies to mix through it. I use carrots, cucumber and peppers but feel free to add any veggies you think your kids will enjoy.
If you have some more time you can also make your own veggie rice from scratch by cooking some long grain rice in vegetable stock.
I also used mini peppers which I cut in half and then filled with cream cheese. These are so delicious and add some protein to the lunch.
I finished the lunchbox off with some strawberries and blueberries but feel free to add whatever fruit your kids enjoy or what’s in season.

Ingredients
- Microwave Vegetable Rice Pouch
- Carrot
- Cucumber
- Red Pepper
- Mini Peppers
- Cream Cheese
- Strawberries
- Blueberries
Instructions
- Cook the rice in the microwave according to the packet instructions.
- Whilst the rice is cooking chop the carrot, cucumber and pepper into small pieces.
- Once the rice has cooked mix with the chopped veggies and put it either directly into the lunch box or into it’s own container.
- Cut the mini peppers in half and remove any seeds. Add a teaspoon of cream cheese to each pepper half. You can sprinkle with a little salt and pepper if you like and add to the lunchbox.
- Finally add the fruit.
