Now that summer seems to have finally arrived I’ve been struggling with breakfast ideas for my little fussy eater.
She will gladly eat porridge on cold mornings but on warmer days she always asks for toast.
We all love a bit of buttery, jammy toast every so often but I’ve been trying to expand her breakfast tastes a bit more. And so this immense breakfast banana split was born!
I used plain greek yoghurt sweetened with a little vanilla extract but you could use any flavour of yoghurt that your kids (or you!) enjoy.
My fussy eater couldn’t quite believe her eyes when she saw chocolate on the plate for breakfast.
I wouldn’t normally give her Nutella so early in the day but I figured that small amount of chocolate is balanced out by all the goodness of that delicious fruit.
I have to say I enjoyed this as much as my fussy eater and I can see us tucking into this breakfast treat a lot over the summer.
We are off on holidays tomorrow for a week (hooray!) so the blog will be a little quiet until I’m back.

Description
Entice your tastebuds with this delicious breakfast treat
Ingredients
- ½ tbsp nutella
- 4 tbsp greek yoghurt
- ¼ tsp vanilla extract
- 1 banana
- 150g / 1 cup berries (I use strawberries, raspberries and blueberries)
- 25g / ⅓ cup granola
Instructions
- Melt the nutella in the microwave for 10-20 seconds until it becomes a bit more runny. Don’t let it burn! Mix the vanilla extract and greek yoghurt together.
- Cut the banana in two lengthways and arrange on a plate. Spoon on the yoghurt, top with the berries and granola and swirl over the melted nutella.
- Serve immediately or keep in the fridge for a couple of hours.

I’m always stuck for new breakfast ideas so this made such a tasty change to our usual repertoire of toast or cereal. Not sure who enjoyed it more, me or the kids!!
