Actifry Parmesan Courgette Sticks

Actifry Parmesan Courgette Sticks

I’m thrilled to be working again Tefal ActiFry. I’ve had my ActiFry Genius XL machine for about a year now and I still absolutely love it. I’ve made so many recipes in it, from the infamous ActiFry chips to main meals and even desserts too.

It has smart automatic cooking settings, it’s big enough to feed the entire family and of course makes incredible tasting dishes with a fraction of the fat.

Earlier I spun the Gear of Goodness which landed on Number 1, meaning the recipe I’m making today is healthy but hearty and easy to make. It’s Parmesan Courgette Sticks.

The recipe can be found in the ActiFry App. This app is completely free, contains hundreds of recipes with step by step instructions and photos too. It also has ActiProgrammes to help you live a healthier and more active lifestyle.

Recipe Steps

The first step in this recipe is to chop some courgettes into sticks of about 5-6cm in length, leaving the skins on.

Next is to prep all the coatings. In one bowl we are going to crack in a gently whisk some eggs. And in another bowl add some dried golden breadcrumbs and grated parmesan.

Next, add plain flour to a sandwich bag, add the courgette sticks and shake it around until they are fully coated.

The final step is then to dip and coat the sticks. Dip them in the egg and then coat in the breadcrumb parmesan mixture.

Remove the paddle from the ActiFry bowl and add the courgette sticks. Brush or drizzle on a little oil and they’re ready to cook! Cook on Mode 2 (Breaded Snacks) for 10 minutes.

When ready, serve immediately with a creme fraiche and chive dip for a delicious starter, light lunch or even an afternoon snack!

Description

Delicious crispy Courgette Sticks coated in a parmesan crumb and made in the Tefal ActiFry for a light and healthy meal or snack


Ingredients

  • 1 small courgette
  • 2 eggs
  • 100g golden breadcrumbs
  • 100g grated parmesan
  • 150g flour
  • 1.5 ActiFry spoons of oil

Instructions

  1. Without peeling them, cut the courgette into sticks about 5-6 cm in length.
  2. Break the eggs into a shallow bowl and whisk lightly with a fork. You can season with salt and pepper at this point if you like.
  3. In another shallow bowl add the breadcrumbs and parmesan and mix.
  4. Put the flour in a sandwich bag, add in the courgette sticks and shake well until coated.
  5. Take each courgette stick, dip in the egg and then coat in the breadcrumb mixture.
  6. Remove the paddle from the ActiFry and add the courgette sticks. Brush or pour on a little oil
  7. Cook on Mode 2 for 10 minutes.

    These were super tasty! We didn’t have any parmesan to hand, used a bit of peri peri seasoning instead. Such a lovely way to do courgette in the Actifry! Will be making this again this week for sure.

      Use milk instead. It works pretty much the same!
