Coconut Bites made in the Tefal Actifry

Did you catch my last post – Mediterranean Vegetable Stir Fry cooked in the ActiFry? This week I’ve teamed up with Tefal to try out their ActiFry Genius XL. I love anything that can save me some time and stress in the kitchen so I was keen to test it out.

The ActiFry is renound for its versatility. From stir fries and chips to bolognese and curry, it can help you to cook up a whole host of dishes, even desserts; making it a real 360° experience.

Tefal ActiFry

To celebrate 360° cooking ActiFry are hosting a big event on Exmouth beach where the public will be treated to a free dinner and dessert. But this is no ordinary “sit down at the table” dinner. This meal will be served skyhigh on the world’s first ferris wheel restaurant!

To help give you a taster of the kinds of recipes that ActiFry will be serving up, I’m going to be cooking up two dishes from the menu; the second being these delicious Gourmet Coconut Bites.

Tefal ActiFry App

ActiFry have a really useful app which you can download for free. Packed with lots of recipes it makes it really easy to get the most from your ActiFry machine.

The recipes are easy to follow, with the ingredients laid out clearly and step by step instructions.

The Coconut Bites were super easy to make, all the ingredients were mixed together in one bowl and then shaped into little quenelles and placed in the ActiFry.

The app tells you exactly what “Mode” to cook the recipe on and you simply leave it to cook on it’s own, allowing you to get on with something else. The rotating paddle helps to brown the food to perfection.

Once you are finished cooking, the removable bowl can be popped into the dishwasher for easy cleaning.

Once cooked, the Coconut Bites can be served straight away or kept in an airtight container for a couple of days. They make a really delicious dessert, served up with some cream or a dip and are also so good as an afternoon snack with a cup of tea or coffee.

Description

Tasty and decadent Coconut Bites, made in the ActiFry Genius XL


Ingredients

  • 190 g of coconut
  • 150 g of sugar
  • 300 g of flour
  • 7.5 cl of coconut milk
  • 7.5 cl of milk
  • 3 eggs
  • Salt and pepper
  • 1.5 level teaspoons of baking powder
  • The juice of half a lemon (or ½ ActiFry spoon of white vinegar)

Instructions

  1. Place all ingredients in a salad bowl and mix with a fork or wooden spoon. You should have a thick, elastic dough.
  2. Brush the ActiFry pan with oil.
  3. Pre-heat for the indicated time.
  4. Use 2 dessert spoons to shape small quenelles of 25-30 g each. Place 14 bites in the ActiFry pan, taking care to leave space around each one. Close the lid.
  5. Cook for the indicated time – Mode 3, Battered Snacks for 12 minutes.
  6. Remove the nibbles from the pan and repeat as many times as needed to use up all the dough.

    These are soooo tasty! I hadn’t even thought of doing dessert in the Actifry. We served ours with vanilla ice cream for a real treat dessert and I can’t wait to make them again.
