Crisp and crunchy chicken nuggets made lighter and healthier in the Tefal ActiFry

I’m delighted to be working with Tefal ActiFry again this year. I’ve been using the ActiFry Genius XL since last year and I absolutely love it. I’ve made everything from their infamous chips to stir fries and even desserts in it!

Today I’m going to be using the ActiFry Genius to make a classic family favourite recipe but lightened up to make it a little healthier in the run up to summer. Earlier today I spun the Gear of Goodness which landed on wow factor recipe no. 1 – chicken nuggets!

The recipe for these chicken nuggets actually comes from the ActiFry App which you can download for free. It has loads of delicious recipes to make it your ActiFry, all with step by step instructions.

The chicken cooks beautifully in the ActiFry. The outside is cripsy and crunchy whilst the chicken on the inside stays tender. These nuggets honestly look and taste like they have been deep fried but of course with a fraction of the oil.

To keep this meal light and healthy in the run up to summer I served the nuggets with salad. Some chopped crudités like carrots, cucumber and peppers would be really delicious too.

Description

Crisp and crunchy chicken nuggets made lighter and healthier in the Tefal ActiFry


Ingredients

  • 450g diced chicken breast
  • 50g plain flour
  • 3 medium eggs
  • 100g fresh breadcrumbs
  • salt and pepper
  • 2 ActiFry spoons of oil

Instructions

  1. Add the diced chicken to a bowl and season with salt and pepper.
  2. Add the flour to a second bowl, eggs to a third bowl (crack them in and gently whisk with a fork) and breadcrumbs to a fourth bowl.
  3. Take one piece of chicken, coat it in flour, dip it in the egg and spinkle on the breadcrumbs. Then transfer to a large plate. Repeat until all the chicken has been coated.
  4. Refrigerate for 30 minutes then brush half of the oil on top of the chicken pieces.
  5. Pour the remaining oil into the ActiFry machine.
  6. Add a single layer of nuggets to the machine (you will have to cook them in two batches) and cook on Mode 2 (15-17 mins).
  7. Serve immediately.

    These nuggets are lovely! They stay really moist inside and are really crunchy on the outside. Won’t be buying shop bought ones again that’s for sure!!!

    Love my actifry! I made these for my sister-in-law who is pregnant and craving crunchy food and they were lovely! So much better than shop bought nuggets.
