Mediterranean Vegetable Stir Fry

As much as I enjoy cooking, juggling a young family with work and home life can sometimes leave little time to prepare and cook up meals.

So when Tefal got in touch to see if I wanted to try out their ActiFry Genius XL I was keen to test it out. Anything that makes my life a little easier in the kitchen has got to be a good thing! 

ActiFry Genius XL

The ActiFry is renowned for its versatility. From stir fries and chips to bolognese and curry, it can help you to cook up a whole host of dishes, even desserts; making it a real 360° experience.

Tefal Actify

To celebrate 360° cooking ActiFry are hosting a big event on Exmouth beach where the public will be treated to a free dinner and dessert.

But this is no ordinary “sit down at the table” dinner. This meal will be served skyhigh on the world’s first ferris wheel restaurant!

Actifry Recipes

To help give you a taster of the kinds of recipes that ActiFry will be serving up, I’m going to be cooking up two dishes from the menu; starting first with this delicious Mediterranean Vegetable Stir Fry.

Tefal Actifry App

ActiFry have a really useful app which you can download for free. Packed with lots of recipes it makes it really easy to get the most from your ActiFry machine.

The recipes are easy to follow, with the ingredients laid out clearly and step by step instructions.

This Mediterranean Vegetable Stir Fry was super easy to make and packed full of lots of delicious and healthy veggies.

Vegetable Stir Fry ingredients

The app tells you exactly what “Mode” to cook the recipe on and you simply leave it to cook on it’s own, allowing you to get on with something else. The rotating paddle helps to brown the food to perfection.

Once you are finished cooking, the removable bowl can be popped into the dishwasher for easy cleaning.

I served these veggies up with some boiled rice for a tasty and super nutritious meal. I then used the ActiFry to test out a dessert recipe, and you can find that recipe for these Gourmet Coconut Bites here.

Description

Delicious and healthy Mediterranean Vegetable Stir Fry, made in the ActiFry Genius XL


Ingredients

  • 1 courgette
  • 250 g fresh button mushrooms
  • 1 aubergine
  • 1 red pepper
  • 1 green pepper
  • 100 ml white wine
  • 1 ActiFry spoon oil
  • 2 cloves of garlic
  • A few sprigs of parsley
  • Salt, pepper

Instructions

  1. Cut the aubergine into thin semi-circle slices. Degorge with salt for 15-30 minutes. Cut the courgette into thin round slices without removing the skin.
  2. Cut the mushrooms in 2 (or in 4 depending on the size) from the top, with the stalk and then cut the peppers into thin strips.
  3. Chop the garlic and rinse the aubergines.
  4. Place the garlic and aubergine in the bottom of the pan. Put the sliced mushrooms in the handle side of the pan. Add the courgettes and then the peppers in front of the mushrooms into the ActiFry pan. Pour the wine over the vegetables. Season. Pour the oil over the peppers.
  5. Close the lid.
  6. Leave to cook for the time indicated – Mode 7: Wok for 30 minutes.
  7. Remove and serve immediately with boiled rice.
  8. If you like crunchy vegetables, reduce the cooking time. You can also serve this vegetable sauté as a cold salad, served with a tangy fresh herb house vinaigrette and sprinkled with Actifry-made croutons.
