Two Ingredient Pancakes for Baby Led Weaning

Feeding kids is hard enough but weaning babies can be even harder. Starting with such a small and limited range of foods it can be difficult to come up with easy and nutritious meals other than pureed fruit and veg.

Today I’m sharing one of my favourite recipes that I used when weaning my baby… super easy and delicious Two Ingredient Pancakes.

I love these pancakes for so many reason. They are quick and easy to whip up. They are nutritious and are made with bananas and eggs, two ingredients that I always seem to have on hand at home.

They are also really soft, making them the perfect food for baby led weaning.

But at the same time they also appeal to older children, meaning you don’t have to make separate meals or snacks. Brilliant!

Two Ingredient Pancakes Babies

Although any kind of banana will work in this recipe it is better to use a very ripe one. Ripe bananas are not only easier to mash but they also taste sweetener, making the pancakes more appealing to little ones.

This means that the pancakes need no added sweetener, keeping them super healthy and nutritious for both babies and older kids.

2 Ingredient Pancakes

This recipe will make approximately 10 pancakes but you can easily double or triple the quantities if you are feeding a crowd.

The pancakes are best served warm but can also be cooled and kept in the fridge for up to 48 hours.

Description

Pancakes made with just two ingredients. Gluten, dairy and sugar free. Perfect for baby led weaning and older children too!


Ingredients

  • 1 ripe banana
  • 1 egg
  • butter or coconut oil for frying

Instructions

  1. Mash the banana. In a separate bowl beat the egg with a fork. Add the banana and mix until well combined. Or if you are lazy like me you can just bung it all in a blender and blitz for a few seconds!
  2. Heat a little butter or coconut oil in a frying pan over a medium heat. Add one tablespoon of the mixture to make each pancake. It will depend on the size of your frying pan but you should be able to cook 5 pancakes at a time.
  3. Fry for approximately 2 minutes on either side or until the pancakes start to brown.
  4. Serve immediately with some chopped fresh fruit.

    This a such an amazing & easy recipe! My 6mth baby loved it! We used the organic virgin coconut oil we bought for his dry skin when he was born so it wasn’t such a bad idea getting it all over his face & hands!

    I’m going to try these tonight for my son. What do you consider to be a large banana? I’m worried that I might not use enough egg or that if I use two, they won’t turn out right.

      Use your judgment as eggs and banana can sometimes be different sizes. You can add a little flour or oats if they are too runny.

      The advice depends on which country you live in but here in the UK egg is fine for an 8 month old. Make sure you use British lion marked eggs.

      They are recommended introducing high allergen foods early now to combat allergic reactions. (If you have no family history of allergies) My 6 month old has eggs everyday!

      In the video the banana I used was very large so I used 2 eggs. But for normal sized banana just use 1 egg

      Hello! The banana helps to bind the pancakes so I wouldn’t leave it out. You could add extra fruit to it for flavour though.

    What did I do wrong?? Mine turned mushy, wouldn’t flip, and were not good at all :/ I blended the ingredients in a baby bullet, used coconut oil in the frying pan…I just don’t get it.

      You have to make sure that they cook completely on one side before you try to flip them, otherwise they will fall apart.

    I added about 1tbs of her “lil bits strawberry oatmeal” which added tiny bits of strawberry in them. ????

    These were great!! I added some cinnamon, blended the batter in my baby bullet, and cooked these on my electric skillet. They turned out perfect- but you are right they really need to cook all the way through before attempting to flip. I would test each one with my spatula a little before flipping to see if they would easily come off the skillet. It also helps a lot I was using a pancake spatula 🙂

    Hey mommies! I have a 9 month old little girl who has all of a sudden started rejecting her baby food. All she wants is yogurt and baby cheese puffs. She dididn’t eat some scrambled eggs the other night. I am quiet discouraged.

    I tried these this morning and it was a disaster. As soon as they hit the skillet (low to medium heat) they turned black. They were so mushy and burnt. 🙁

    Any suggestions on this and or other foods I can try with her?

      Hi Jessica, make sure they are fully cooked on one side before trying to flip them. Because they don’t contain any flour it is more difficult to get them to bind together, so make sure they are cooked through on one side before flipping!

            You may need to add a small amount of milk depending on the quantity of oats you are using.

            I don’t add milk. I add just enough ground oats (aka baby oatmeal) to make the batter a bit thicker. I really just eye ball it and sometimes add more after making the first batch. I find that the oatmeal makes them easier to cook and fluffier!

      Hi Isa! I can’t say for definite that it would work as I haven’t tried it myself. But definitely worth a try. Probably 180c / 370f for 5-10 mins max.

    I really wanted this to work, but I think this recipe needs a very small banana or even two eggs. I followed the recipe as written and they tasted good but were so mushy they were inedible. My daughter, who eats everything, just mashed them into the tray and I threw the rest out.

      I havent tried but I think they should freeze ok maybe wrapped in baking / greaseproof paper
