Tomato Pasta Soup

Description

A simple Tomato Pasta Soup recipe, easy to make and great for a quick and easy lunch for kids.


Ingredients

  • 1/2 tbsp oil
  • 1 onion, diced
  • 2 garlic cloves, crushed
  • 2 tinned chopped tomatoes
  • 600ml vegetables stock
  • 1/4 tsp dried basil
  • 100g small pasta shapes

To top:

  • grated parmesan and fresh basil

Instructions

  1. Add the oil and onions to a large saucepan on the hob and cook for 3 minutes.
  2. Add the garlic and cook for another 1 minute.
  3. Add the tinned tomatoes, vegetable stock and dried basil. Bring to the boil.
  4. Add the pasta shapes and simmer on high for 10-12 minutes until the pasta has cooked. Stir every few minutes to ensure that the pasta does not stick.
  5. Serve immediately with grated parmesan and fresh basil leaves.

Notes

Leftovers can be kept in the fridge for up to 3 days and be reheated on the hob or in the microwave. The pasta will expand even more so feel free to add some extra stock or water to the soup to thin it out a little.

It can also be frozen for up to 3 months. Defrost in the fridge overnight and reheat as above.
