A delicious and healthy lunch for one at home; baked salmon and veggies with a sticky sesame sauce!
On these cold Winter days it’s really nice to be able to whip up something hot for lunch if you are at home. A cold salad just won’t cut it at the moment!
This recipe for Sticky Salmon with Veggies may look a bit complicated to make but honestly it’s so easy. All the ingredients are cooked together in one dish in the oven leaving you to get on with other things.
I always have some of these frozen salmon fillets in the freezer. They’re handy to pull out just one portion at a time. They’re skinless too and of course a bit cheaper than buying fresh salmon.
If you want to use fresh salmon rather than frozen then simply cut out the initial 5 minutes of cooking at the start.
For the vegetables I used sugar snap peas, baby corn and red pepper but you can pretty much use any veggies that will cook relatively quickly in the oven.
The sauce gets added for the last few minutes and is a simple mix of soy sauce, ketchup and honey. I like my food spicy so I also add a dash of chilli sauce!

Description

Ingredients
- 1 frozen salmon fillet
- 2 tsp sesame oil
- 50g sugar snap peas
- 50g baby corn
- ½ red pepper, roughly chopped
- 1 tsp soy sauce
- 1 tsp ketchup
- 1 tsp honey
- optional: dash of chilli sauce
- 0.5 tsp sesame seeds
Instructions
- Preheat the oven to 180c.
- Add the salmon fillet to an oven dish and rub with half of the sesame oil. Bake in the oven for 5 minutes.
- Add the veggies to the dish and drizzle on the rest of the oil. Bake for 10 minutes.
- Mix the soy sauce, ketchup, honey and chilli sauce (if using) together in a small bowl or cup and pour this over the salmon.
- Bake for a final 5 minutes.
- Remove from the oven, sprinkle on the sesame seeds and serve.
