Make breakfast on-the-go easy and delicious with this Protein Pot, packed with spinach, eggs and smoked salmon

Did you see my Avocado Protein Pot breakfast idea? Inspired by those little pots you can buy in Pret and in supermarkets I wanted to make my own at home.
This version uses smoked salmon instead of avocado for what feels like a really decadent but super healthy breakfast on the go.

You can buy the round glass containers from Amazon. They come with lids to perfect to pack up a breakfast to take out and about or to work.
Simply fill with a handful of baby spinach leaves, boiled eggs and some slices of smoked salmon for a tasty low carb breakfast. If you want to add some carbs to it then a slice of wholemeal toast would be delicious on the side.

Description
Make breakfast on-the-go easy and delicious with my Spinach, Egg & Smoked Salmon Protein Pot
Ingredients
- 2 medium eggs
- 20g fresh baby spinach
- 50g smoked salmon
- salt and pepper
Instructions
- Add the eggs to a small saucepan of boiling water and simmer on high for 6 minutes.
- Run the eggs under cold water to cool down, peel and then cut in half
- Add the baby spinach to a container along with the eggs and then the smoked salmon.
- Season to taste with salt and pepper.
Notes
This Protein Pot is best eaten within a few hours of making.
