Delicious Genius gluten free breakfast bagels with peanut butter or cream cheese and topped with fresh summer fruit.
My family have always been big bagel fans. My daughter calls them “donut bread” and we usually buy a packet once a week to have for breakfast and packed lunches. So when Genius asked if I wanted to try out some of their bread products, including their bagels, I was keen to give them a try.
Genius products are of course gluten free. Genius was founded by professionally trained chef, Lucinda Bruce-Gardyne, who developed Genius bread after failing to find good quality gluten-free and wheat-free bread suitable for her gluten intolerant son. We are fortunate not to have any gluten intolerances in our family but I know lots of people who do need to avoid gluten for various reasons so I thought it would be interesting to do a bit of a taste test!
I quite often serve bagels with fruit for breakfast so I decided to use the Genius Plain and also the Cinnamon & Raisin flavour to make a variety of different Summer Fruit Breakfast Bagels. I used cream cheese on some and peanut butter on others but you could pretty much add any spread that you like, maybe even jam or greek chocolate spread too.
We have so much delicious fresh fruit available to us at the moment so I tried to incorporate as much of it as possible into our breakfast. But obviously you can use whatever fruit is available seasonally where you live.
My whole family absolutely loved this breakfast. I didn’t tell them that I had swapped our usual bagels for the Genius brand and to be honest I don’t think they noticed as there was no complaints! Genius recommend toasting or grilling the bagels which gives them the most authentic taste and texture.
