A healthy version of a Pina Colada Smoothie with a low calorie substitute for coconut milk.
Sipping on this smoothie with my eyes closed I can imagine myself on a warm tropical beach, cocktail in hand, listening to the waves lap the shore. Provided of course I could block out the kids screaming, the tv blaring and forgetting the fact that its currently a chilly 12 degrees and threatening to rain any minute.
Ok…so this smoothie doesn’t work miracles but it might just put a perk in your step first thing in the morning and if it’s after 5pm 7pm then add a splash of rum and I guarantee your day will become infinitely better!
My version of this Pina Colada Smoothie is made with coconut water rather than coconut milk which keeps the calories and fat content down. I am a bit obsessed with this coconut water and get through at least a large carton a week. I usually drink it on its own but this was the first time I tried it in a smoothie and I was very impressed.
My fussy little eater even gave this smoothie a go. A word of warning though – despite the name suggesting otherwise, this smoothie isn’t very smooth! If your little ones don’t like ‘bits’ in their drinks then maybe leave out the desiccated coconut and blitz the pineapple for a good few minutes to make it as smooth as possible.

Description

Ingredients
- 200g fresh or canned pineapple
- 250ml coconut water
- 150g low fat natural yoghurt
- 1 tsp desiccated coconut
- 3 ice cubes
Instructions
- Peel and chop the pineapple if using fresh.
- Put all the ingredients in a blender and blitz until well combined.
