A delicious lunch, either at home or at work, made with thin bagels, mozzarella and pesto

You may think of bagels as being a bit indulgent but it’s totally possible to enjoy bagels whilst still trying to be a little healthier with your meals.
I love these Thin Bagels as they’re still super tasty, just with less of the dough bread you usually get in a bagel.

You can use red or green pesto for this recipe. Personally I absolutely love this Chilli Pesto and it gives a really nice kick to the bagel!
To serve I’ve added a small side salad of lettuce, tomato and cucumber but that’s optional.

This recipe is best eaten straight away. To bring this work to lunch it’s best to pack all the ingredients separately and assemble the bagel when you’re ready to eat.

Pesto Caprese Bagel

Description
A delicious lunch, either at home or at work, made with thin bagels, mozzarella and pesto.
Ingredients
- 1 thin bagel
- ½ tbsp pesto (red or green)
- 30g fresh mozzarella, sliced
- 1 tomato, sliced
- 4 basil leaves
Instructions
- Spread the pesto onto one side of the bagel.
- Add mozzarella, tomato and bagel the top with the other side of the bagel.
- Serve immediately with a side salad.
