A delicious lunch, either at home or at work, made with thin bagels, mozzarella and pesto.
- 1 thin bagel
- 1/2 tbsp pesto (red or green)
- 30g fresh mozzarella, sliced
- 1 tomato, sliced
- 4 basil leaves
- Spread the pesto onto one side of the bagel.
- Add mozzarella, tomato and bagel the top with the other side of the bagel.
- Serve immediately with a side salad.
This recipe is best eaten straight away. To bring this work to lunch it’s best to pack all the ingredients separately and assemble the bagel when you’re ready to eat.
