Peach Quinoa Breakfast Bars

Peach Quinoa Breakfast Bars

As a busy parent I know just how difficult it can be to rustle up quick and filling breakfasts that the whole family will eat. And so do Princes! This week I’m teaming up with Princes to showcase a variety of nutritious breakfasts all made with their delicious canned fruit. 

Yesterday on Instagram I shared this idea for a 2 minute Mango Breakfast Bagel. And today I’m sharing my recipe for these super delicious Peach Quinoa Breakfast Bars.

Peach Quinoa Breakfast Bars

These bars are ideal to whip up at the weekend or in the evening, ready for a grab-and-go breakfast the next morning.

Princes canned Peach Slices with juice

These bars are made with oats and quinoa, along with Princes Peach Slices with Juice, making them really filling and the perfect healthy start to the day for the whole family.

You can then keep them in the fridge for up to 3 days, on hand for a grab-and-go breakfast in the morning.

They can also be frozen for up to 6 weeks and left out to defrost overnight. If you don’t want to eat them cold they can easily be reheated in the microwave.

Why is Canned Fruit So Good?

I am a massive fan of canned fruit for so many reasons. It’s economical as there’s no waste and the cans keep in your cupboard for a long time. So no mad dashes to the supermarket for fresh produce needed!

For lazy people like me canned fruit is also ideal – no peeling, coring or chopping needed!!

Description

Delicious and so easy to make, these Quinoa Breakfast Bars are made with Princes Peach Slices. Ideal for grab-and-go breakfast on busy mornings!


Ingredients

  • 2 ripe bananas
  • 2 medium eggs
  • 1/2 tsp vanilla extract
  • 100g (3/4 cup) cooked quinoa
  • 150g (1 1/2 cups) rolled oats
  • 1 tin Princes Peach Slices with Juice, drained and roughly chopped

Instructions

  • Preheat the oven to 180c / 350f and line an 8 x 8 inch dish with parchment paper.
  • Mash the bananas and add them to a bowl with the eggs and vanilla extract and mix well.
  • Add in the quinoa and oats and mix again. Finally stir in the chopped peaches.
  • Transfer the mixture to the dish and bake in the oven for 25 minutes until firm to touch.
  • Allow to cool before cutting into 9 squares.
  • Serve with some greek yogurt and extra Princes Peach Slices with Juice.

Notes

These breakfast bars can be kept in an airtight container in the fridge for up to 3 days or frozen in a suitable bag or container for up to 6 weeks.

    My son loves them. I thought they were a bit stodgy and bland but turns out they’re a bit. I found they went mouldy after 5 days. So eat in the few days after making.
