Over the past few months I’ve been teaming up with Lamb, Try It Love It: an EU funded campaign to promote the versatility and benefits of adding some more delicious lamb recipes into our diets.

Lamb MeatBalls Recipe
Today I’m sharing my final recipe in this series, a super tasty but very easy to make One Pot Greek Lamb Meatball dish. I’m all about one pot meals at the moment. Anything that saves on time, faff and washing up is a winner in my book and this recipe ticks all those boxes.
It takes about 30 minutes to make this dish but all the effort is at the beginning, meaning you can just leave it to bubble away on the stove and get on with other things.
It’s a really versatile meal as well. It will go down brilliantly as a mid-week family meal but also looks impressive enough to serve up if you have friends round for dinner.

The first step is to fry the lamb meatballs until they get a little colour on them. This also helps to remove some of the fat as you can drain that off.

Next up is to add all the veggies, potatoes, chopped tomatoes and stock, bring it to the boil and the simmer for about 25 minutes.

To finish I added some black olives and then topped with crumbled feta. Absolutely delicious and very simple to make!
I served mine with toasted pitta breads and some Greek yogurt mixed with mint sauce. For a dinner party I would also add a big side salad.

Description
A delicious and easy to make One Pot Greek Lamb Meatball recipe. Perfect to feed the family mid-week but just as good to be served up at a dinner party.
Ingredients
- 1 tsp oil
- 500g lamb meatballs
- 1 red onion, sliced
- 2 cloves of garlic, crushed
- 1 small aubergine, chopped
- 2 peppers, chopped
- 400g baby potatoes, chopped
- 150g cherry tomatoes
- 1 tin chopped tomatoes
- 500ml lamb stock
- 1 tbsp honey
- 1 tsp mint sauce
- 1 lemon, sliced
- ½ tbsp cornflour
- 50g pitted black olives
- 100g feta cheese
Instructions
- In a large frying pan or dish heat the oil and fry the meatballs for a few minutes until they have lightly browned. Drain off the excess oil.
- Add the onions, garlic, aubergine, peppers, baby potatoes and cherry tomatoes and mix well.
- In a large jug mix together the tin of chopped tomatoes, lamb stock, honey and mint sauce and pour this into the pan.
- Finally top with slices of lemon and bring to the boil.
- Reduce to a simmer and cook for 20-25 minutes until the meatballs and potatoes are cooked through, stirring regularly.
- To thicken the sauce, remove some of the sauce from the pan into a mug and mix with the cornflour until all the lumps are gone. Pour this back into the pan and mix well. Cook for another minute or two until the sauce has thickened up.
- Finally, remove from the heat, stir in the olives and top with the feta.
- Serve immediately with toasted pitta bread, fresh mint and a side salad.

Can this be done in a slow cooker? Obviously adding the cheese at the end.

Hi Gemma, yes this could be done in the slow cooker. But you will need a lot less liquid/stock if doing in the slow cooker. Probably around 200 ml rather than the 500 ml in the recipe? That is just a guess though in terms of amounts as we’ve not tried it in the slow cooker! Let us know how it works out if you do try it!
