One of my New Years Resolutions this year is to eliminate as much food waste as I can in our home. I try as much as possible to keep food waste to a minimum but when I am busy and disorganised I can find myself slipping back into old habits.
I’ve teamed up with Lamb, try it love it an EU funded campaign to promote the versatility and benefits of adding some more delicious lamb recipes into our diets. This month we’re focusing on lunch “al desko”, which ties in perfectly with my New Year’s Resolution to use up as much leftovers as possible.
Lamb is a great option when choosing meats because:
1. It’s more sustainable than most other animal agriculture farming.
2. It has numerous health benefits. It’s rich in Vitamin B12 and niacin and is also a good source of essential minerals like zine, potassium, phosphorus and pantothenic acid.
3. Lamb can be a really affordable meat, especially when buying cuts like leg or shoulder that are ideal for slow cooking.
4. It’s so versatile and can be used in so many ways from roasts to lamb chops, burgers, meatballs and of course perfect for leftovers too!
This recipe uses leftover lamb to make a super delicious lunch for the following day. This cuts down on food waste but also cuts down on food bills, as there’s now no need to go out and buy a dry and over-priced sandwich!
I used leftover leg of lamb from a roast to make these Greek Pittas but it would work well with any leftover cut of roast lamb.
I’ve paired the lamb up with a delicious Greek-style dip made from yogurt, garlic and mint sauce. This adds bags of flavour to the pitta and puts a totally different spin on the roast lamb.
This lunch is super easy to pack up and take into work. Put the pitta bread and salad items into a lunch box and add the yogurt dip to a small container (I re-used this sauce container from an Indian takeaway!)
I chose lettuce, tomato and cucumber to fill my pitta but any salad will work just fine.
I then add slices of the leftover lamb to another container. Make sure this is microwave-safe so you can reheat the lamb at work.
When you are ready for lunch simply pop the pitta bread into the toaster and heat the lamb in the microwave until warmed through.

Use up leftover lamb from your Sunday roast to make a delicious Greek Lamb Pitta Bread Sandwich for lunch the following day!
Ingredients
- leftover slices of roast lamb
- 75g plain or Greek yogurt
- 1 garlic clove, crushed
- ½ tsp mint sauce
- salt and pepper
- 1 pitta bread
- handful of lettuce
- 1 tomato
- ¼ cucumber
Instructions
- Add the slices of lamb to a microwave safe lunch box.
- Make the dip by mixing together the yogurt, garlic and mint sauce. Season to taste and add this to a small container.
- Finally add the pitta bread, lettuce, tomato and cucumber to another lunch box.
- Keep everything refrigerated until you are ready to eat.
- Cut the pitta bread in half and heat in the toaster.
- Heat the lamb in the microwave until warmed through.
- Assemble the pitta breads with salad and lamb and add some of the yogurt sauce.
- Eat immediately.

This sounds really tasty. We eat lamb quite a bit and whilst we always have a little bit leftover from a roast, there isn’t really enough to make another whole meal from so this idea is perfect from me for lunch on a Monday.
