No Bake Peanut Butter Flapjacks

If there’s one thing my children love it’s snacks! No matter how much they’ve eaten for their main meals they still ask for a snack several times a day. And now they’re back at school they’re hungrier than ever in the afternoon. 

This month I’ve teamed up with Zanussi to share five recipes to make the back-to-school period a little easier; including these tasty Peanut Butter Flapjacks.

Feeding kids the right afternoon snack can be tricky. You want something that is going to satisfy their hunger and fill them up, but not too much as you still want them to have an appetite for dinner a couple of hours later!

This recipe ticks all those boxes. It’s packed full of nutritious and filling ingredients like oats, peanut butter and seeds, just enough to fill their little bellies until tea time!

Ingredients for No Bake Peanut Butter Flapjacks

These flapjacks are really easy to make. Other than melting the peanut butter, coconut oil and honey together there is no cooking involved. The flapjacks will firm up in the freezer and can then be kept for several days in the fridge.

Recipe Substitutions:

1. The coconut oil can be substituted for unsalted butter.

2. I use peanut butter in my recipe but feel free to use another nut butter if you prefer.

3. The honey can be substituted to maple syrup or another liquid sweetener like date syrup.

4. If you want to make the flapjacks even more enticing to kids you could add some chocolate chips or a drizzle of melted chocolate on top.

Description

Delicious Peanut Butter Flapjacks, packed with oats and seeds and perfect for a post-school afternoon snack for kids!


Ingredients

  • 175g oats
  • 30g raisins
  • 25g seeds (I used pumpkin and sunflower seeds)
  • 100g smooth peanut butter
  • 60g coconut oil
  • 4 tbsp honey

Instructions

  1. Line an 8x8in dish with parchment paper.
  2. Add the oats, raisins and seeds to a large bowl and mix well.
  3. Add the peanut butter, coconut oil and honey to a saucepan. Cook over a medium heat until the ingredients have all melted and started to bubble.
  4. Pour the peanut butter mixture over the oats and mix really well.
  5. Transfer the mixture into the dish and press down firmly with the back of a spoon, making the mixture as compact as possible.
  6. Chill in the freezer for 45 minutes before cutting into 8 pieces.
  7. Store in the fridge.
