Delicious Peanut Butter Flapjacks, packed with oats and seeds and perfect for a post-school afternoon snack for kids!
Sponsored Post
If there’s one thing my children love it’s snacks! No matter how much they’ve eaten for their main meals they still ask for a snack several times a day. And now they’re back at school they’re hungrier than ever in the afternoon.
This month I’ve teamed up with Zanussi to share five recipes to make the back-to-school period a little easier; including these tasty Peanut Butter Flapjacks.
Feeding kids the right afternoon snack can be tricky. You want something that is going to satisfy their hunger and fill them up, but not too much as you still want them to have an appetite for dinner a couple of hours later!
This recipe ticks all those boxes. It’s packed full of nutritious and filling ingredients like oats, peanut butter and seeds, just enough to fill their little bellies until tea time!
These flapjacks are really easy to make. Other than melting the peanut butter, coconut oil and honey together there is no cooking involved. The flapjacks will firm up in the freezer and can then be kept for several days in the fridge.
Recipe Substitutions:
1. The coconut oil can be substituted for unsalted butter.
2. I use peanut butter in my recipe but feel free to use another nut butter if you prefer.
3. The honey can be substituted to maple syrup or another liquid sweetener like date syrup.
4. If you want to make the flapjacks even more enticing to kids you could add some chocolate chips or a drizzle of melted chocolate on top.
If you try these Flapjacks recipe then please do leave me a comment and a star rating below. You can also share your pictures with me on on Instagram. I always love to see your creations!
I shared these flapjacks in a Facebook Live over on the Zanussi Facebook Page . There’s still time to enter the competition to win one of two Zanussi Electric Ovens. The competition is open until 23:59 on 3rd October 2018 and the terms and conditions are here!
Disclosure: I have been compensated for my time spent working on this campaign with Zanussi but as always all thoughts and opinions are honest and are my own.

How many days can these be kept?
Vicky says
They can be kept in the fridge for up to a week, but best eaten straight away or within a day or so.
Sabrina says
Hello. I’m wondering if these can be frozen? Many thanks!
Vicky says
Hi Sabrina, we advise these are stored in the fridge ideally, we have never tried to freeze, but cant see any reason as to why they cant be frozen and de-frosted. Enjoy!

Do you need to use the coconut oil? How would it alter them if this was omitted?
Madiha Javed says
I am lobing the look and sound of this recipe.
Which oats shall i use ? Also perhaps a daft question, will raw oats be okay to eat though ?
Thanks
