A delicious gluten, dairy and sugar free ice cream made with just two ingredients; strawberries and bananas!
This week I’m going to be posting more than my usual three recipes a week. I realised at the weekend that I had a backlog of recipes to blog.
I seem to be good at cooking and snapping my food but not so good an uploading them to the computer.
So one of your extra special bonus recipes this week is this Two Ingredient Strawberry Ice Cream!
This is another one of those recipes that have been doing the rounds on Pinterest for a little while now.
There are hundreds of different varieties and versions of this fruit ice cream but I’ve kept mine very simple…literally two ingredients simple!
My recipe is made with just strawberries and bananas, that’s it!
What makes it so healthy?
It’s gluten free.
It’s also dairy free.
Most importantly, it’s sugar free (apart from natural occurring fruit sugars of course)!
And finally, it’s vegan friendly too!
I don’t think it could get more healthy if it tried!
It’s really important that you make this with frozen fruit. Don’t try blitzing strawberries and bananas straight from the fruit bowl and then freezing it, it just won’t work properly.
The variations for this ice cream are never-ending.
You could jazz this one up with some chocolate chips or experiment with your own flavours of fruit.
The ice cream can be spooned straight from the freezer and served on a cone or in a cup. Just don’t forget the sauce and sprinkles!
With the schools breaking up for summer this week and the fantastic warm weather we’ve been having, I’m sure kids all over the country will be nagging their parents and carers for ice cream over the coming weeks.
This recipe is perfect as it satisfies their frozen treat craving and makes you feel a little better knowing that it’s just fruit!
So what did my fussy eater think? She may look like a deer caught in the headlights in this picture but believe me, that’s her “excited but posing for a picture” face!

Description
A delicious gluten, dairy and sugar free ice cream made with just two ingredients; strawberries and bananas!
Ingredients
- 4 bananas
- 250g / 9 oz strawberries
Instructions
- Hull the strawberries and chop them in half (or quarters if they are very big). Chop each banana into 5 or 6 pieces.
- Place the fruit in a ziplock bag, squeeze out the air and seal. Place in the freezer for at least 6 hours or overnight if possible.
- Remove the fruit from the freezer and transfer it to a food processor. You may have to let it defrost slightly for a few minutes to break the chunks of fruit apart.
- Blitz the fruit until it is smooth, like the consistency of a smoothie. Pour into a loaf tin or other freezer-proof dish, cover with cling film and freeze for an hour.
- Remove from the freezer and serve in a cone or in a cup.

You could make a “vanilla” style one with bananas, coconut milk and some vanilla essence. I bet that would taste amazing!
