Healthy Chicken Fajitas

Delicious Healthy Chicken Fajitas, so quick and easy to make and perfect for a mid-family week meal. Serve with tortilla wraps or lettuce wraps for a healthier option.

I love Mexican food and you can't beat fajitas for a quick and easy midweek meal. They're so simple to make, with just a few basic ingredients for the fajita filling and then topped with whatever toppings you fancy!

Juicy chicken wrapped in warm tortillas and packed full of healthy sliced veggies, this recipe will be a great addition to your weekly meal plan.

And because you can easily customize the fillings and toppings, it's an easy meal for the whole family to enjoy together!

Homemade Fajita Seasoning

You can buy fajita spice mix or seasoning mix in most supermarkets but it's honestly so cheap and so easy to make your own at home. My recipe has just four ingredients:

  • Ground Cumin
  • Mild Chilli Powder
  • Smoked Paprika
  • Garlic Powder

You can make the spice mix fresh each time of make up a big jar of it and add 2.5 teaspoon each time you can these fajitas.

What Chicken Should I Use For Fajitas?

I've used boneless skinless chicken breasts in this recipe. Breast meat is lean chicken so definitely the most healthy option, but you could always use boneless skinless chicken thighs if you wanted to.

Fajita Toppings

Fajitas are a delicious and easy way to pack in loads of healthy ingredients into your meal.

You can use all sorts of different veggies in them such as:

  • yellow, green or red bell peppers
  • thinly sliced red onion
  • sweetcorn
  • tomatoes
  • avocado for a dose of healthy fats
  • mushrooms

Why not fill a large bowl or board with everyone's favourite vegetables and sauces and let them create their own!

How To Serve This Chicken Fajita Recipe

I usually serve the kids' fajitas in mini tortilla wraps and for my own portion I serve them in little gem lettuce leaves.

If you don't fancy serving them in lettuce leaves, but would like a slightly healthier option than the white tortilla wraps, then go for for a whole wheat tortilla as they contain more fibre and are generally better nutritionally.

Toppings are optional but you really can't beat a little dollop of sour cream and grated cheese at a minimum! Or swap out the soured cream for some plain greek yogurt if that's more to your tastes.

And don't forget to add a squeeze of fresh lime juice as it really does bring the flavours to life!

Description

Delicious Chicken Fajitas, so quick and easy to make and perfect for a mid-week meal. Serve with tortilla wraps or lettuce wraps for a healthier option.


Ingredients

Scale
  • 500g diced chicken breast
  • 1 tsp ground cumin
  • ½ tsp mild chilli powder
  • ½ tsp smoked paprika
  • ½ tsp garlic granules
  • 1 red onion, sliced
  • 2 peppers, sliced
  • ½ tbsp oil
  • 1 lime
  • mini tortilla wraps and little gem lettuce

To serve:

  • sour cream / creme fraiche / greek yogurt
  • grated cheddar cheese
  • salsa
  • guacamole 
  • chopped lettuce
  • fresh coriander
  • wedges of lime


Instructions

  1. Mix the spices together in a large bowl and then add in the chicken breasts. Mix well so that the chicken is fully coated in all the spices.
  2. Heat the oil in a frying pan and add the onions. Cook for 1-2 minutes and then add the peppers and chicken.
  3. Cook for 10-12, stirring regularly until the chicken is piping hot and cooked through.
  4. Cut the lime in half and squeeze in the juice from one half. Keep the remaining half to serve.
  5. Serve in mini tortilla wraps or little gem lettuce leaves with your favourite toppings.
