This time of year it’s all about fun Christmas food ideas. And rightly so! But if you’re looking for a way to still sneak in some goodness into your kids’ meals then you need to try these Christmas Tree Green Pancakes.
Yes they’re green. Which I know some kids will hate but if you say they were made by the Elf then maybe you’ll get away with it!
The first step is to add spinach and milk to a blender and blitz until completely smooth.
Make up a basic pancake batter of flour, raising agents and eggs.
I also add honey to this to balance out the savoury flavour of the spinach.
Pour in the blitzed spinach and mix everything together.
Line a baking tray with parchment paper and grease with butter or oil to ensure that the pancakes don’t stick.
Pour in the pancake batter and bake for 14 minutes.
Once cooked, you will need 4 round cookie cutters of varying sizes to cut out shapes from the pancake.
If you don’t have cookie cutters then anything round like a glass or jar will work.
Cut out 4 circles of each size so you will have 16 circles in total.
Take 2 of each size circles and layer them up to make a Christmas tree shape.
This recipe will make two portions.
Use a small star cutter to cut out 2 star shapes for the top of the tree.
Secure with a cocktail stick.
Lastly, dust with some icing sugar to create a fun snowy effect.

Ingredients
- 100g spinach
- 200ml milk
- 150g plain flour
- 1 tsp baking powder
- ½ bicarbonate of soda
- 2 medium eggs
- 2 tbsp honey
- Oil or butter for greasing
- yellow pepper
- icing sugar
Instructions
- Preheat the oven to 200c fan.
- Add the spinach and milk to a blender and blitz until smooth.
- Add the flour, baking powder, bicarbonate of soda, eggs and honey to a bowl.
- Pour in the spinach mixture and mix well.
- Line a baking tray with parchment paper and grease with oil or butter.
- Pour the pancake batter into the tray and bake for 14 minutes.
- You will need 4 round cutters of varying sizes to make the Christmas tree effect.
- This pancake batter recipe will make two Christmas trees, each with 8 pancakes, so 16 in total.
- If you don’t have round cookie cutters then any round object like a glass will work. Run a sharp knife along the outside to cut out the pancake shapes.
- Assemble 8 pancakes on each plate and then use a star cutter to cut out two shapes for the top, securing with a toothpick.
- Dust with icing sugar and serve immediately.

Our Elf’s are going to make these for my daughter for breakfast tomorrow morning, like most 6 year old she will not touch spinach or even look at it without pulling a face, so it will be interesting to see if she eats these or at least gives them a try.
