Elf Christmas Tree Green Pancakes

Description

Delicious healthy pancakes packed with spinach and shaped in a Christmas Tree. Just what the Elf ordered for breakfast!


Ingredients

  • 100g spinach
  • 200ml milk
  • 150g plain flour
  • 1 tsp baking powder
  • 1/2 bicarbonate of soda
  • 2 medium eggs
  • 2 tbsp honey
  • Oil or butter for greasing
  • yellow pepper
  • icing sugar

Instructions

  1. Preheat the oven to 200c fan.
  2. Add the spinach and milk to a blender and blitz until smooth.
  3. Add the flour, baking powder, bicarbonate of soda, eggs and honey to a bowl.
  4. Pour in the spinach mixture and mix well.
  5. Line a baking tray with parchment paper and grease with oil or butter.
  6. Pour the pancake batter into the tray and bake for 14 minutes.
  7. You will need 4 round cutters of varying sizes to make the Christmas tree effect.
  8. This pancake batter recipe will make two Christmas trees, each with 8 pancakes, so 16 in total.
  9. If you don’t have round cookie cutters then any round object like a glass will work. Run a sharp knife along the outside to cut out the pancake shapes.
  10. Assemble 8 pancakes on each plate and then use a star cutter to cut out two shapes for the top, securing with a toothpick.
  11. Dust with icing sugar and serve immediately.
