A delicious creamy pasta recipe with three hidden veggies blended into the sauce

You know I love a good Hidden Veg Recipe and let’s be honest an Airfryer Recipe too! So I thought I would combine the two and make a hidden veg pasta sauce with the veggies roasted in the airfryer.
The sauce is wonderful and creamy, perfect for kids who like macaroni cheese and other pasta dishes like that.
The first step is to add the veg to a dish and drizzle with some olive oil.
Airfryer at 190c for 15 minutes.
You can also place the veggies directly into the Airfryer if you prefer. I don’t as I find my method of using the dish less messy.
Also, my airfryer has those air ridges along the edge which makes it harder to get food out from the bottom. But if you have an Airfryer like a Ninja then feel free to add the veg directly in.
To Cook In The Oven – You can also roast the veggies in the oven. The instructions are in the recipe card at the bottom of this post.
Whilst the veggies are roasting, cook some pasta in a saucepan on the hob according to the package instructions.
Once the pasta is cooked and before you drain it, remove 50ml of the pasta water and set it aside to use with the sauce.
Add the roasted veggies to a blender or food processor with some cream cheese and grated cheese. You can also season with a little salt and pepper at this point if you like.
Also add in that 50ml of reserved pasta water. This will help to loosen up the veg and create a really silky sauce.
Blitz until the sauce is completely smooth.
Fussy Eater Tip – There will still be some flecks of green in the sauce from the courgette. If you think your kids won’t like this then you can peel the courgette before cooking it to remove the green outer layer.
Mix the sauce with the drained pasta and it’s ready to serve up!
You can batch make this sauce in double or triple the quantities if you like and freeze to use another time. All storing and freezing instructions are in the recipe card at the bottom of this post.

Ingredients
- 200g courgette
- 1 yellow pepper
- 150g cherry tomatoes
- 3 garlic cloves
- 1 tbsp olive oil
- 350g pasta
- 150g cream cheese
- 50g grated cheddar
- salt and pepper to taste
Instructions
- Chop the courgette and yellow pepper into pieces and add to a dish with the cherry tomatoes, whole garlic cloves and drizzle over the olive oil.
- You can also add the veg directly into the airfryer but I prefer to use a dish as it’s less messy.
- Airfry at 190c for 15 mins.
- To roast in the oven, cook at 200c fan for 20-25 mins.
- In the meantime, cook the pasta in a saucepan on the hob according to the package instructions. When the pasta is cooked and before you drain it, remove 50ml of the pasta water and set aside.
- Once the veggies are cooked, add to a blender or food processor with the cream cheese, grated cheddar, reserved pasta water and a little salt and pepper to taste.
- Blitz until completely smooth and mix with the pasta.
- Serve immediately.
Notes
Leftover sauce can be kept in an airtight container in the fridge for up to 3 days.
It an also be frozen. Defrost in the fridge overnight and reheat on the hob or in the microwave.
