If you are a regular reader on my blog then you know I am possibly the biggest overnight oats fan out there!
I am forever concocting new flavours for this simple and delicious breakfast but I have to refrain myself from posting them all here as I don’t want to bore everyone with oats!
So far I’ve shared this Cocoa Banana Overnight Oats recipe and also a recipe for Orange, Coconut & Vanilla Overnight Oats.
Now that the sun has finally come out I wanted to create a more summery oats recipe and so the Strawberry Shortcake version was born!
First up a little confession; this recipe doesn’t actually contain any shortcake. But honestly you will not miss it because these oats taste exactly like strawberry shortcake ice cream. It’s incredible!
But unlike ice cream, this is a really fantastic well balanced breakfast to feed the whole family. It contains a good amount of fat and protein to fill everyone up (go for full fat greek yogurt for the most protein and fat) and the slow-releasing carbs will keep you full until lunchtime.
You can use fresh or frozen strawberries for this recipe, depending on when they are in season where you live. Frozen strawberries are usually a little cheaper and also when you dunk them into hot water to defrost them, they become quite mushy, which means they soak into the oats a lot easier.

Description

Ingredients
- 12 strawberries (fresh or frozen)
- 2 cups rolled oats
- 1.5 cups milk
- 0.5 cups greek or plain yogurt
- 1 tbsp strawberry jam
- ¼ tsp vanilla extract
- optional toppings: chopped fresh strawberries and dessicated coconut
Instructions
- Chop the strawberries into small pieces. If you are using frozen strawberries defrost them quickly by placing them in a bowl of boiling water for 2 minutes.
- Place the chopped strawberries in a bowl and mix in all the other ingredients. Stir well, cover the bowl and place in the fridge for a minimum of one hour.
- When you are ready to eat them, simply remove from the fridge and decorate with your choice of toppings. The oats can be eaten cold or else heated in the microwave for 30-60 seconds.
Notes
The oats will keep in the fridge covered for 2-3 days.

What size mason jar would hold the appropriate single serving of this recipe? I got pint size. Is that too big or too small?

That should be absolutely fine. As long as there is room for the oats to expand once they have soaked up the liquid but a pint sized jar should be fine for a single serve. x

I just came across this and can’t wait to try it. My only concern is, I make my own vanilla extract in bulk. How would this work? No way can I send the little off to school smelling like rum. With this not being cooked. Should I cook off the booze before mixing all this together?

If you are worried about the vanilla extract then its absolutely fine to just leave it out.

Hi Zainab, they should be fine, especially if you soak the oats overnight as they become very soft. But maybe test them yourself to see.

Hi, I was thinking about this recipe and I will definitely try as is. I was wondering if maybe using some graham crackers broken into pieces would provide that sort of shortcake taste in them? I know they would go soft inside with the oats but I think they may be nice.
Possibility number 2 that I thought was maybe trying some Panko bread crumbs (the unseasoned ones of course). They would be quite different then the graham crackers but may be a nice addition as I think they may also go soft with the oats?
I don’t have a ton of time to experiment and end up getting it really wrong so if anyone tries any of these suggestions please let me know if they provide the “cake” texture to go with the strawberry shortcake name? Thanks!!

I love overnight oats! I actually never had really heard of it before buying this package of Muesli from Trader Joes in the U.S. On the side of the package it gave directions on how to make them cold. Instead of eating them hot like I imagine most people do.
After having the Muesli. I was hooked. I’m so happy to see that there are actually lots of recipes out there for the cold oats.
My question Ashly, I love steel cut oats. They are Sooooo good for you. I’ve never tried them for overnight oats. I just assumed they would never get soft enough. How long do you soak yours for? And do you have any recipes you can share with me?

I have only used rolled oats in my overnight oats recipes. Steel cut oats just aren’t as readily available in the UK so I don’t know how long they would need to soak for.
