One Pot Pasta Bolognese

Description

A simple but delicious Pasta Bolognese recipe, all cooked together in one pot. Super easy and minimal washing up too!


Ingredients

  • 1/2 tbsp oil
  • 1 onion
  • 2 garlic cloves
  • 2 carrots
  • 1 celery stick
  • 500g beef mince
  • 1 tin chopped tomatoes
  • 1 litre beef stock
  • 3 tbsp ketchup
  • 1/2 tsp oregano
  • 300g dried penne
  • 2 tbsp grated parmesan

Instructions

  1. Heat the oil in a large casserole dish on the hob.
  2. Add the onion, garlic, carrots and celery and cook for 3 minutes.
  3. Add the beef mince and fry until browned.
  4. Add the tinned tomatoes, beef stock, ketchup and oregano and bring to the boil.
  5. Add the pasta, stir well and simmer for 20 minutes until the pasta is cooked.
  6. Stir every few minutes to ensure the pasta doesn’t stick together.
  7. Add the grated parmesan and mix well.
  8. Serve immediately.

Notes

Leftovers can be kept in an airtight container in the fridge for up to 2 days and reheated in the microwave or on the hob. This recipe can also be frozen. Defrost in the fridge overnight.
