Along with getting better at meal planning<\/strong> (you can read more about that here<\/a>!), one of my new year’s resolutions is to make a homemade soup<\/strong> at least once week. <\/p>\n\n\n\n

Soups<\/strong> can be a great healthy<\/strong> meal<\/strong> for the whole family and are usually very cheap<\/strong> to make. Plus the leftovers<\/strong> are perfect for lunch<\/strong> the next day! <\/p>\n\n\n\n\n\n\n\n

I mentioned that I had a really easy recipe<\/strong> for Minestrone Soup<\/strong> in my meal plan video a couple of weeks ago and several of you guys asked for the recipe… so here it is! <\/p>\n\n\n\n

It really is super simple, using ingredients that I always have to hand at home and it takes just 15 minutes<\/strong> from start to finish.<\/p>\n\n\n\n

I used frozen veggies<\/strong> in my recipe as they are so handy to have in the freezer and cook in no time at all. <\/p>\n\n\n\n

You can of course use some chopped fresh<\/strong> veggies<\/strong> and instead add them after you fry the onions to ensure they are cooked.<\/p>\n\n\n\n

I stopped making soup for quite a long time as I just found it too messy to feed to my toddler. <\/p>\n\n\n\n

But this soup is brilliant as it’s so chunky, meaning you can give toddlers<\/strong> lots of the pasta<\/strong>, beans<\/strong> and veggies<\/strong> and just a small amount of liquid, making it much easier for them to feed themselves.<\/p>\n\n\n\n
