Summer has most definitely kicked in here in the UK.

The BBQ’s are being dragged out of the shed and the picnic blankets are being shaken down, all ready to enjoy some al fresco eating while the weather is so good.

I’ve teamed up with the iconic British brand that is Bramley Apples to bring you a delicious apple salad recipe that’s perfect for this time of the year.

Bramley Apples

Incredibly, the Bramley Apple has over 200 years of heritage but is still just as relevant to cooks today as it was back then.

Bramley Apples are such a versatile ingredient and they are just as tasty in a classic pudding as in something more exotic.

It’s also the best apple to cook with as it high malic acid content and lower sugar levels produce a stronger tangier tasting apple after cooking, making it ideal to caramelise.

The caramelised Bramley Apple wedges make the perfect starting point for this delicious salad.

The tangy flavour pairs perfectly with the sweetness of the Wensleydale cheese.

The wholewheat cous cous makes this dish hearty and filling, while the walnuts and pomegranate seeds add a really satisfying crunch.

All together this makes an impressive but super easy salad, perfect to share between two people as a meal or between more people as a side salad.
