Looking for a quick, easy and delicious mid week meal<\/strong> to make for your family<\/strong>? Then look no further because my Sausage & Butterbean Casserole<\/strong> ticks ALL those boxes! I’ve been making this recipe for literally years now so I thought it was high time I actually got around to blogging it! <\/p>\n\n\n\n\n\n\n\n

You guys know by now that I’m all about my speedy dinner<\/strong> recipes and this casserole<\/strong> couldn’t get much quicker or simpler. Everything is cooked on the hob in one pan<\/strong> with ingredients that I always have to hand.<\/p>\n\n\n\n

Ingredient Substitutions<\/strong><\/h2>\n\n\n\n

I used pork sausages for this recipe but chicken, turkey or vegetarian sausages all work really well too.<\/p>\n\n\n\n

The butter beans are a great source of protein and fibre and I add in some sneaky vegetables too with some diced carrots!<\/p>\n\n\n\n

Freezing & Storing<\/strong><\/h2>\n\n\n\n

Leftovers can be be kept in a container in the fridge for up to 2 days and reheated in the microwave or on the hob.<\/p>\n\n\n\n

This recipe can also be frozen in a freezer bag or container. Defrost in the fridge overnight and then reheat in the microwave or on the hob.<\/p>\n\n\n\n
