It’s no secret that kids love corn on the cob<\/strong>. Deliciously sweet and fun to eat, making it the perfect veg for fussy eaters.<\/strong><\/p>\n\n\n\n

It is also packed full of nutrients, in particular\u00a0vitamin B1, vitamin B5, vitamin C, phosphorus, manganese, folate<\/strong> and dietary fiber<\/strong>, making it an ideal choice for growing children.<\/p>\n\n\n\n

Traditional Mexican Corn on the Cob<\/strong> is of course served with cotija cheese<\/strong> but it’s not easy to get your hands on it in the UK.<\/p>\n\n\n\n

However feta<\/strong> makes a great substitution. The chilli salt<\/strong> gives the corn just a little kick of heat, without being overpowering.<\/p>\n\n\n\n

But feel free to alter the amount of cayenne<\/strong> and chilli <\/strong>you use depending on your or your family’s tastes.<\/p>\n\n\n\n

My favourite way to serve this corn is as a side dish to a big steaming bowl of chilli<\/a><\/strong>. But it would make a fantastic lunch all on it’s own too. Enjoy!<\/p>\n\n\n\n
