I don’t ever need an excuse to eat pancakes, but with Shrove Tuesday or Pancake Day coming up, I’ll gladly get on board and get flipping!

Why do I love pancakes so much?

1. They’re easy to make and perfect for getting the kids involved in the kitchen.

2. Basic pancakes don’t require expensive or complicated ingredients, just some flour, eggs and milk.

3. Fabulously versatile, they can be eaten for breakfast, as a snack or for dessert.

4. Even when made with healthier ingredients, they still feel like a real treat!

Can you batch cook pancakes?

Absolutely. Pancake batter can be made in advance and kept in the fridge overnight. This is a brilliant way to get ahead if you want to make pancakes for breakfast.

Simply whisk up the batter the night before and leave it covered in the fridge. Then in the morning all you need to do is fry and flip!

Cooked pancakes can also be frozen. Freeze them with sheets of parchment paper between them to stop them sticking. Then defrost in the microwave in just a couple of minutes.

So hopefully now convinced how amazing pancakes are, here are 12 of my favourite pancake recipes suitable for little kids, big kids and even weaning babies!
