If you thought healthy chocolate pancakes weren’t possible then think again – with just three simple and nutritious ingredients you can create some delicious pancakes with no added sugar that are also gluten and dairy free.

Weaning Pancakes

This recipe is based on my super popular 2 Ingredient Baby Weaning Pancake recipe. I call them weaning pancakes as they are ideal for babies for so many reasons:

1.They are super healthy, made with nutritious bananas and eggs and cocoa powder for that chocolatey taste.

2. They have no added sugar or honey so are ideal for babies under 12 months. They are sweetened only by the bananas.

3. They are gluten and dairy free so ideal for babies with allergies or intolerances.

4. They are very soft and easy for babies to chew and swallow. They are also easy to pick up for babies to self-feed.

5. They can be eaten anytime of the day. Serve them with some yogurt for breakfast or with some chopped fruit as a snack.

"Banans,

These pancakes really are so simple to make. You will need a blender or nutribullet of some sort to blitz the ingredients as it helps the cocoa powder to mix evenly with the other ingredients.

The mixture will then look like this. It will be quite runny but don’t worry, that’s totally normal.

"Blended

Pour or spoon in the mixture to make up to 8 small pancakes and cook them for a couple of minutes on either side until browned and cooked through.

You can use either oil or butter to fry these pancakes. I use coconut oil as it adds a lovely subtle taste.

STORING & FREEZING

1. These pancakes can also be made ahead of time and kept in the fridge in an airtight container for up to 48 hours. To reheat, fry them gently again in a frying pan or warm in the microwave.

2. They can also be frozen. Stack them with a layer of parchment paper between them so they don’t stick. Leave out for a few hours to defrost and then reheat as above.
