We are back from holidays and I&#8217;m throwing myself straight back into blogging (I&#8217;ve actually missed it&#8230;awww!) But first, can we talk about this weather? <\/p>\n\n\n\n<p>When we left it was typical British summer weather but we&#8217;ve seem to have come back to monsoon season. It didn&#8217;t even rain this much in Ireland! We were quarantined indoors for a couple of days with suspected chicken pox (she didn&#8217;t have it &#8211; another false alarm!) and to overcome our boredom I decided to introduce her to the wonder that is the microwave mug cake.<\/p>\n\n\n\n<p>I&#8217;m the kind of person who will buy a whole cake, have one slice but then keep picking at the rest until I feel sick. So these individual mini cakes are perfect as I can just make one portion and there&#8217;s no waste. The short cooking time is also perfect for cooking with kids. <\/p>\n\n\n\n<p>At three years old my fussy eater&#8217;s attention span is pretty short and she loses interest in baking usually once the cake has gone into the oven. This is a microwave cake, made in less than 30 seconds. It&#8217;s not going to win any awards. But that said it&#8217;s still a lot better than a lot of&nbsp;store bought chocolate cakes I&#8217;ve tried.<\/p>\n\n\n\n<p>I would also recommend eating this mug cake straight away, while the half melted chocolate chips are still all deliciously gooey and the sponge is still lovely and warm. I took ours out of the ramekins and decorated it with icing sugar and strawberries.
