Meatless Monday<\/h2>\n\n\n\n

If there’s one  dinner which goes down a storm with the whole family in my house, it’s fajitas! <\/p>\n\n\n\n

There are hundreds of chicken fajita recipes on the internet these days but I really wanted to try and make some healthy tofu fajitas as something a bit different.<\/p>\n\n\n\n

This is a really easy vegan or vegetarian dinner. We aren’t vegan or vegetarian as a family, but we do try and reduce the the amount of meat we eat each week so it is perfect for a Meat Free Monday meal!<\/p>\n\n\n\n

Just remember to swap out the cheese and yogurt ingredients for vegan alternatives if you are wanting to make this fully vegan friendly.<\/p>\n\n\n\n

Cooking Tofu<\/h2>\n\n\n\n

Cooking tofu is actually not as daunting as it might seem once you remember the basics!<\/p>\n\n\n\n

Tofu comes in various textures ranging from silken tofu to an extra-firm tofu. If you are baking, grilling or even frying tofu then I’d probably opt for a the firmer variety.<\/p>\n\n\n\n

It contains a lot of water! So you will need to get rid of the excess water before preparing it for cooking.<\/p>\n\n\n\n

It’s really easy to do using a special tofu press, but don’t worry if you don’t have one!<\/p>\n\n\n\n

You can just as easily drain tofu using some paper towels and a heavy object like a large skillet or another heavy object. You can see how I removed the excess liquid in the recipe card below.<\/p>\n\n\n\n

Tofu has quite a neutral taste in its original forms so it’s great for altering the flavour with whatever marinades or sauces you like.<\/p>\n\n\n\n

You can also change the texture of tofu easily to make it more inviting for kids by coating it to make the tofu wonderfully crispy. The slight crunch of the tofu goes so well with the soft floury tortilla.<\/p>\n\n\n\n

How To Build Your Fajitas<\/h2>\n\n\n\n

Placing everything on the table and letting everyone help themselves is a great way to make mealtimes a little bit less stressful for everyone!<\/p>\n\n\n\n

Kids enjoy the sense of control they have over the meal and they might be encouraged to try new toppings if they know they can just add a little bit of it to their meal!<\/p>\n\n\n\n

Here’s how we build ours….<\/p>\n\n\n\n

Take one of your flour tortillas and add some lettuce and sweetcorn.<\/p>\n\n\n

Add the grated cheese, tomatoes and onion.<\/p>\n\n\n

On top of this, add the cooked tofu strips and add a squeeze of lime juice.<\/p>\n\n\n

Finally finish off with a dollop of your sauce or dip!<\/p>\n\n\n

Our Favorite Fajita Toppings<\/h2>\n\n\n\n

For these vegetarian fajitas, we used:<\/p>\n\n\n\n

– grated cheese<\/p>\n\n\n\n

– tomato and onion<\/p>\n\n\n\n

– sweetcorn<\/p>\n\n\n\n

– shredded lettuce<\/p>\n\n\n\n

– fresh lime juice<\/p>\n\n\n\n

But you can literally put anything you like in your fajitas!<\/p>\n\n\n\n

Thin strips of green pepper would also work really well or you could even just make up some pico de gallo and add a spicy mexican cheese!<\/p>\n\n\n\n

Fajita Dips & Marinades<\/h2>\n\n\n\n

I made a coriander and yoghurt dip for these fajitas. We usually have a slightly spicy salsa if we are having traditional fajitas but I fancied something a bit different this time!<\/p>\n\n\n\n

And the cool yogurt dip went really well with the subtle flavours in the marinate tofu. <\/p>\n\n\n\n

You could also just use sour cream if you wanted to keep it really simple.<\/p>\n\n\n\n

The marinade isn’t set in stone either. I kept it quite mild as my fussy eater doesn’t like anything too spicy.<\/p>\n\n\n\n

But you could jazz it up with more chili powder or other mexican flavours. <\/p>\n\n\n\n

You could even use a store bought packet of fajita seasoning or taco seasoning depending on how spicy you want to go!<\/p>\n\n\n
