When it comes to affordability and convenience you really can’t beat canned food.

As food prices are increasing and fresh produce becomes more and more expensive, it seems that as a nation we are returning to some old favourites.

Including stocking up our cupboards with lots of canned food that provides excellent value for money.

So when Love Canned Food got in touch to challenge me to prepare a delicious summer recipe which includes a selection of canned products, I jumped at the chance. ​

Love Canned Food is a celebration of all things canned.

Beans, pulses, tomatoes, fruits, vegetables, meat, fish.

And with a large variety of products available to buy in cans, it’s easy to prepare well-balanced, healthy and affordable meals all year round.

And with over 98% of us buying it already, we’re clearly a nation of can lovers.

Tuna Nicoise Frittata Ingredients

For my recipe I decided to make a Tuna Nicoise Frittata. It’s the perfect summer lunch that can be eaten at home or packed up and taken out and about for a picnic or beach lunch.

Which Canned Products Did I Use?

  • Canned New Potatoes (so convenient as they are already cooked and peeled!)
  • Tinned tuna
  • Canned sliced green beans
  • Canned black olives

These were all so easy to purchase and store, leaving little to no food waste.

Fresh Produce I Also Used

  • Grated Cheese
  • Red Peppers
  • Cherry Tomatoes

I was really pleased with how my Tuna Nicoise Frittata turned out and it’s inspired me to try out some more canned food products this summer.

Description

Celebrate the versatility of canned food by making this super easy Tuna Nicoise Frittata using tinned tuna, sweetcorn, potatoes, green beans and olives.


Ingredients

  • 180g canned peeled and cooked new potatoes, drained
  • 120g canned tuna in spring water
  • 75g canned sliced green beans
  • 50g canned sweetcorn
  • 40g canned black olives
  • 100g cherry tomatoes, halved
  • ½ red pepper, chopped
  • 60g grated cheddar cheese
  • 5 large eggs
  • 1 tbsp flour
  • ½ tsp dried herbs
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 180c.
  2. Add the potatoes, tuna, green beans, sweetcorn, olives, cherry tomatoes, red pepper and grated cheese to a large bowl and mix well.
  3. In a separate bowl or jug crack in the eggs and add the flour and herbs. Season to taste with salt and pepper and whisk with a fork.
  4. Line a large dish (roughly 25cm square) with parchment paper and transfer the vegetables into it, spreading evenly around the dish. Pour the egg mixture in on top and bake in the oven for 25 minutes until it is cooked through.
  5. Allow to cool for 10-12 minutes before cutting into 12 slices.

    I absolutely love tinned tuna and my little one is a massive tuna fan too but I’ve never thought of putting it in a frittata before. So glad we tried this as it’s really nice! Great to just have in the fridge too when I need a quick snack instead of reaching for the biscuits!
