Delicious soft chocolate brownies made with mashed sweet potato. Low in sugar and a great healthy snack for kids.

Brownies are always a favourite in my house so why not try to make them a little healthier and sneak some veg in there too.
Sweet potatoes are high in vitamin A, vitamin C, and manganese and also a great source of fibre, something a lot of kids are lacking in. So adding them to snacks like these brownies are an easy way to increase their daily serving without any food arguments.

Can You Taste The Sweet Potato?
I know this will be a very commonly asked question so lets deal with it upfront!
In short no, I don't think you can taste the sweet potato at all. It's a very mild vegetable and naturally sweet in flavour so it blends into the brownie mixture really well.
You can however get a very mild taste of banana. If your kids hate banana then swap it for 120g of apple sauce instead which will work just as well in the recipe.

How To Make Sweet Potato Brownies
All the ingredients and measurements used in this recipe are in the recipe card down below but I've also included some step by step images here that might be helpful to see how they are made.

- Add the cooked sweet potato and banana to a bowl and mash.

- Add eggs, sugar, melted butter and vanilla and mix.

- Add flour, cocoa powder and baking powder and mix again.

- Transfer to a lined brownie dish and bake for 20 minutes.
Once cooked, allow the brownies to cool in the dish before removing. Simply lift up the parchment paper to remove and then cut into 9 squares.

Ingredient Substitutions
Gluten Free - you can use gluten free plain flour in this recipe
Dairy Free - you can swap the butter for a dairy free spread instead
Banana - if your kids don't like banana or can't eat it due to an allergy, you can swap it for 120g of apple sauce.
Sugar - you can swap the sugar for honey or maple syrup.

Storing & Freezing
These brownies will keep in an airtight container for 2 days. They can be eaten cold or heated up in the microwave for a few seconds to make them warm.
They can also be frozen for up to 2 months. Defrost at room temperature in a couple of hours.

Description
Delicious soft chocolate brownies made with mashed sweet potato. Low in sugar and a great healthy snack for kids.
Ingredients
- 480g raw sweet potato
- 1 medium banana
- 2 medium eggs
- 70g sugar
- 70g butter, melted
- 1 tsp vanilla
- 70g plain flour
- 25g cocoa powder
- 1 tsp baking powder
Instructions
- Preheat the oven to 180c / 390f and line a brownie tin with parchment paper.
- Pierce the sweet potatoes with a knife several times and cook in the microwave for 7-8 minutes until soft when you stick a knife all the way through.
- Use a spoon to scoop the sweet potato out of the skin and add it to a bowl with the banana.
- Mash with a fork.
- Add the eggs, sugar, melted butter and vanilla and mix with a spoon.
- Add the flour, cocoa powder and baking powder and mix again.
- Transfer the mixture into the lined brownie tin and bake in the oven for 20 minutes.
- Allow to cool before cutting into 9 pieces.
