The recipes I made today to make feeding my family a bit easier this week

For the past few weeks I've been spending a couple of hours at the weekend making up some recipes to have during the week. Yes it takes a bit of time out of my Sunday but definitely makes life a bit easier when I know I have some breakfasts, dinners and snacks ready to pull out.
Here's what I made this weekend:
1. Cinnamon Rolls

This is a relatively new recipe of mine the past couple of weeks. But they went down a storm with my family so I made another batch up today.
They'll keep in the fridge for a few days and can be reheated in the microwave for a quick breakfast. You can also freeze them.

2. Airfryer Ham

Tesco had an offer on an unsmoked gammon last week. I picked up a big 1.75kg gammon for just over £6 so decided to cook it up and we can have it for dinners and lunches during the week.
I cooked it on the hob in water and a couple of stock cubes for 1 hour 45 mins. Then added a glaze of honey, brown sugar and dijon mustard. Then put it in the airfryer at 180c for 12 minutes. Be sure to double line the airfryer with tin foil as this glaze is super sticky and is so hard to clean!
Absolutely delicious and a great way to get several meals from one piece of meat.
3. Chocolate Courgette Mini Banana Breads

For snacks I made up these Mini Chocolate Banana Breads with courgette. I actually didn't have a ripe banana so used some apple sauce instead. Any of my baking recipes that contain banana you can swap it out for 120g of apple sauce - a good tip to know!
This square baking tin is one of my own Pick Plates products. I know lots of people are waiting for them to come back in stock. I *think* they will be here in the next couple of days.... keep your fingers crossed for me!

4. Sheet Pan Kofte

I prepped this Sheet Pan Kofte Kebab for dinner tomorrow night. You just mix together some beef mince with red onion, pepper and some herbs and spices.
Then press it into a lined tray, cut into 8 slices and score diagonally. I covered it with foil and popped in the fridge then tomorrow I just need to cook it in the oven.

5. Ham & Egg Cups

For breakfasts for myself this week I made my Ham & Egg Cups. I actually did half with ham and half with slices of chicken. The chicken ones burnt around the edges but still seem perfectly edible!
Popped them in to the fridge and I can pull them out for a quick high protein breakfast over the next few days.
