What I prepped to make feeding my family a bit easier this week

At the beginning of this year I started taking a couple of hours at the weekend to prep some food for the week ahead. Even though I'm cooking a lot during the week I often find myself stuck for a quick a decent breakfast or snacks for the kids. Or I get to 5pm and I don't have anything prepped for dinner.
It's also been a great way to go through my fridge at the end of the week and see what needs using up.
Here's what I made this week:
1. Porridge Bread

This is so easy to make. It contains no flour, just oats so it's packed with wholegrains and fibre.
It's delicious for breakfast with butter and some jam, honey or peanut butter. It will keep for a few days in an airtight tin and you can also freeze it in slices and just pop into the toaster to defrost.

2. Sausage Bites

I had a packet of chicken sausages that needed using up so made up a batch of my Chicken Sausage Bites. You can also use pork or veggie sausages to make these.
They keep in the fridge for a couple of days and are great for lunchboxes or just a quick savoury snack.

3. Oat & Raisin Cookies

This is a super old recipe of mine and I haven't made them in ages so thought I'd dig out the recipe again today.
They are a brilliant healthier cookie for kids. They do contain sugar but less than those big shop bought cookies. They'll keep for a few days in an airtight tin or can be frozen too.

4. Freezing Cooked Rice

I recently just started batch cooking rice and freezing it in portions. I used to hate cooking rice and always messed it up so got myself a rice cooker and I love it. Perfect rice every time!
I make up a big batch then freeze it in individual portions. I can then microwave it from frozen any evening I need rice for dinner.
This is a similar 4 section freezer cube container to the one have.
5. Hidden Veg Katsu Sauce

I'm still delighted with my discovery that I can make all my hidden veggie sauces in a soup maker. It chops, cooks and blends all in one jug so less washing up. But totally fine to do it on the hob too.
This week I made my Hidden Veg Katsu sauce and froze it in portions. One thing I've noticed about doing these sauces in the soup maker is that the liquid doesn't evaporate as much as it does on the hob. So either use a little less stock or add some more veggies.
