What I prepped to make feeding my family a bit easier this week

At the beginning of this year I started taking a couple of hours at the weekend to prep some food for the week ahead. Even though I'm cooking all week I often find myself stuck for a quick dinner or snacks for the kids.
It's also been a great way to go through my fridge at the end of the week and see what needs using up.
Here's what I made this week.
1. Fruit For Smoothies

My husband has been making lots of smoothies for breakfast the last few weeks. Fresh fruit is just so expensive and he doesn't like using frozen fruit as it take a while to blend.
So I bought these stacking containers for the fridge, filled them with frozen berries, pineapple and mango and will leave them in the fridge to defrost. He can then easily grab them over the next few mornings.

2. Granola Yogurt Pots

Next I made granola and berry compote. The compote will keep in the fridge for a few days and you can freeze it too. The granola will keep for a couple of weeks at least in an airtight jar.
Then just add to a jar with yogurt for really quick breakfasts during the week.

3. Apple Muffins

For snacks I made some mini apple muffins. I used my own brand mini baking tray from Pick Plates. It's currently out of stock but will be back in a few weeks.
The mini tin makes 12 muffins but you can also make 6 large muffins in a normal sized muffin tray.
I kept a few for snacks today and put the rest in the freezer to take out later in the week.

4. Hidden Veg Curry

I then made a batch of my Hidden Veg Curry sauce. I've just discovered you can make these kind of sauces in a soup maker and it's a game changer! It chops, cooks and blends all in one jug so less washing up. But totally fine to do it on the hob too.
I bagged the sauce up and popped into the freezer. One day this week I'll take it out, defrost and just add some chicken for an easy dinner.

5. Boiled Eggs

And lastly, not very exciting but I found a yellow sticker pack of Burford Brown eggs in the supermarket. They needed using up quickly so I boiled them all, cooled them and popped into the fridge for breakfasts or lunches for myself for the next few days.
