Rocky Road Bites

All the delicious flavours of rocky road in a mini bite sized form. The perfect sweet treat this Christmas!

It wouldn’t be Christmas in my opinion without rocky road. There’s just something about it that so festive for me so I have to make at least one batch every December!

This year I decided to make them into a mini bite sized version. Perfect to nibble with a cup of coffee or to serve up to guests this Christmas.

What Are Rocky Road Bites

The ingredients are pretty simple. Dark and milk chocolate (you can use all dark or all milk if you prefer), malteasers, shortbread and mini marshmallows.

I’ve kept this recipe quite basic so that the kids will eat it. But you can add other ingredients like glace cherries, raisins etc if you like.

Essentially, it’s the same as classic rocky road but made into smaller bite sized pieces instead.

How To Make Rocky Road Bites

Apart from melting the chocolate there’s no cooking involved so this is a brilliant recipe to get the kids involved in helping.

Once the chocolate is melted add the rest of the ingredients and mix.

Add a spoonful of the mixture to a lined baking tray. You should be able to make 20 bites with this recipe.

This is optional but I like to add a tiny pinch of salt to the top of each bite. There’s something about the combination of sweetness and the hint of saltiness that’s so delicious!

The bites are refrigerated for 30 minutes then ready to enjoy!

They will keep in the fridge for a week although it’s unlikely they’ll last that long! They can also be frozen too.

Ingredient Substitutions

This recipe really is so versatile and you can leave out any ingredients you don’t like and add lots of others including:

Glace cherries, raisins, nuts, digestive biscuits etc.

Description

All the delicious flavours of rocky road in a mini bite sized form. The perfect sweet treat this Christmas!


Ingredients

  • 200g milk chocolate
  • 200g dark chocolate
  • 100g malteasers 
  • 75g shortbread
  • 50g mini marshmallows
  • pinch of salt

Instructions

  1. Break the chocolate into squares and add it to a large bowl.
  2. Place the bowl over a pan of hot water and simmer on a low heat until the chocolate has melted, stirring constantly.
  3. Remove the bowl from the pan and get the rest of the ingredients ready.
  4. Cut the malteasers in half and break the shortbread into small pieces.
  5. Add the malteasers, shortbread and mini marshmallows to the melted chocolate and stir well.
  6. Line one large or two smaller tray with parchment paper. Add a spoonful of the mixture to the parchment paper at a time. You should be able to make 20 bites from the mixture.
  7. Add a tiny pinch of salt to the top of each bite.
  8. Refrigerate for 30 minutes until solid.

Notes

These Rocky Road Bites are best kept in the fridge for up to 1 week. They can also be frozen and defrosted in an hour or two at room temperature.
