A tasty hidden veggie pasta sauce; the vegetables are roasted in the oven with Boursin cheese and blended to create a sauce ready to mix with pasta

We love this simple Boursin Pasta Recipe in my house but I wanted to make a similar sauce with that also packed in some hidden veg.
I roasted the Boursin with carrots, peppers, courgettes and tomatoes, along with some red onion and garlic and blended it all up to create a delicious sauce ready to mix in with pasta.
It's easy to make as you just whack the Boursin and veggies in the oven and leave to cook. Handy for busy evenings when you have other things to get on with at home!

How To Make Roasted Veg Sauce
The full recipe with all the ingredients and measurements in at the end of this blog post but I've also included some step by step images here that might be helpful to follow along.

- Chop the veggies and add them to a large baking dish.

- Mix in the oil and oregano and add the Boursin to the centre. Bake for 35 minutes.

- Add the cooked veggies and Boursin to a food processor with some of the pasta cooking water.

- Blitz until smooth.
Mix the sauce with cooked pasta and it's ready to serve up.

Top Tip
I blended the sauce in a food processor so it still had some of the texture of the veggies to it.
If you think your kids won't like this and would prefer a completely smooth sauce then I would instead use a blender to blitz the sauce. It will make it much smoother. Probably better for very picky eating children.

Storing & Freezing
Leftover sauce can be kept in an airtight container in the fridge for up to 2 days and reheated in the microwave.
It can also be frozen for up to 2 months. Defrost in the fridge overnight and reheat as above.

Description

Ingredients
- 2 large carrots
- 1 small courgette
- 1 yellow pepper
- ½ red onion
- 200g cherry tomatoes
- 3 garlic cloves
- 1.5 tbsp oil
- ½ tsp oregano
- 150g Boursin
- 350g pasta
Instructions
- Preheat the oven to 180c / 390f.
- Chop the carrots, courgette, yellow pepper and red onion into bite sized pieces and add to a large baking dish along with the whole cherry tomatoes.
- Add the garlic cloves, peeled but left whole.
- Drizzle on the oil, add the oregano and mix well.
- Make a space in the centre of the dish and add the Boursin.
- Bake in the oven for 35 minutes.
- In the meantime cook the pasta in a saucepan on the hob. Before draining remove 250ml of the pasta cooking water and set aside.
- Remove the dish from the oven and transfer the veggies and Boursin to a food processor or blender. Add the reserved pasta water and blitz until smooth.
- Mix this sauce with the cooked pasta and serve immediately.
