Description

Super simple two ingredient Rice Cake Clusters. Perfect for a homemade snack with no cooking or baking required!

Ingredients

  • 150g milk chocolate
  • 3 large rice cakes
  • optional: sea salt flakes

Instructions

  1. Break the chocolate into a bowl and melt in the microwave.
  2. Microwave for about 1 minute, but stopping to stir every 10-15 seconds to ensure that the chocolate doesn’t burn.
  3. When the chocolate is melted, break in the rice cakes. You want to get the pieces of rice cake quite small.
  4. Mix really well so that the rice cake pieces are all coated in the chocolate.
  5. Add a small spoonful of the mixture to a lined baking tray. You should be able to make 15 clusters from the mixture.
  6. This is totally optional but you can also add a sprinkling of sea salt flakes to the top of each cluster. The contrast of the sweet chocolate with the salt is really delicious.
  7. Refrigerate for 30 minutes.
