Raspberry & Coconut Energy Bites

Description

Delicious and healthy energy bites packed full of oats, peanut butter, freeze dried raspberries and shredded coconut. A tasty and nutritious snack that adults and kids will love!


Ingredients

  • 100g (1 cup) rolled oats
  • 100g (1/2 cup) smooth peanut butter
  • 2 tbsp freeze dried raspberries
  • 2 tbsp honey
  • 2 tbsp shredded coconut
  • 2 tbsp ground flaxseed
  • 1/2 tsp vanilla extract
  •  
  • To coat:
  • 2 tbsp freeze dried raspberries
  • 2 tbsp shredded coconut

Instructions

  1. Add all the ingredients to a large bowl and mix well.
  2. Roll into about 12 balls.
  3. In a food processor add the extra freeze dried raspberries and shredded coconut and blitz until they are fine and powder-like.
  4. Roll the energy bites in this mixture and then transfer to the fridge to firm up for 30 minutes.
  5. Serve immediately or keep in an airtight container in the fridge.

Notes

These energy bites can be stored in an airtight container in the fridge for up to 5 days.

They can also be frozen in a freezer bag or container. They can then be defrosted in the fridge overnight.
