Description
Delicious and healthy energy bites packed full of oats, peanut butter, freeze dried raspberries and shredded coconut. A tasty and nutritious snack that adults and kids will love!
Ingredients
- 100g (1 cup) rolled oats
- 100g (1/2 cup) smooth peanut butter
- 2 tbsp freeze dried raspberries
- 2 tbsp honey
- 2 tbsp shredded coconut
- 2 tbsp ground flaxseed
- 1/2 tsp vanilla extract
- To coat:
- 2 tbsp freeze dried raspberries
- 2 tbsp shredded coconut
Instructions
- Add all the ingredients to a large bowl and mix well.
- Roll into about 12 balls.
- In a food processor add the extra freeze dried raspberries and shredded coconut and blitz until they are fine and powder-like.
- Roll the energy bites in this mixture and then transfer to the fridge to firm up for 30 minutes.
- Serve immediately or keep in an airtight container in the fridge.
Notes
These energy bites can be stored in an airtight container in the fridge for up to 5 days.
They can also be frozen in a freezer bag or container. They can then be defrosted in the fridge overnight.
